Planned nice and early again this week as got a busy weekend. Will shop on my way home from hairdresser tomorrow (means I get to go to the big Sainsburys 🙃)
Sat - pear, Stilton and walnut salad, crusty bread
Sun - smoked salmon sandwich (out for lunch 😋)
Mon - leek, bacon and pea pasta
Tues - egg and avocado on toast
Wed - tuna steak with lentils, spinach and sun dried tomatoes
Thurs - chorizo and chickpea stew
Fri - scampi, chips and peas5 -
Two changes to last week's meal plan - Thursday's corned beef hash didn't happen and was swapped out for egg & chips with curry sauce at DH's request and, since there was so much meat left over from the lamb joint, I've chunked some up for a lamb Balti. That in itself will make three meals - one for tonight and two for the freezer, which is getting quite full (again).
Plan for the coming week:
Sun - Roast beef and Yorkshires (from freezer), mash and greens
Mon - Salad with gammon slices (from freezer)
Tue - Liver, bacon & onion casserole, mash, carrots & swede
Wed - Cod cakes, chips, peas
Thur - Haven't decided yet
Fri - Battered cod fillets
This morning I've made up a tub of custard and will use that during the week for afters - maybe with a fruit crumble or perhaps just fruit with custard. I need to bake something too as the cake tin is empty. I'll see what ingredients are in the baking cupboard and then decide. I'm fancying coconut and white chocolate buns.Be kind to others and to yourself too.4 -

Sun - Lamb and gravy, greens, mash
Mon - Kung Pao chicken stir fry with noodles
Tue - Pork & apple casserole, swede, mash
Wed - Scampi & side salad
Thu - Egg & chips
Fri - Some kind of fish meal
The soup, lamb & gravy, chicken, pork and scampi are all coming from the freezer so that will give me a bit of wriggle room.
I still haven't done any baking for the cake tin (better for the waist line I suppose) but will be doing some this week as I've found cocoa powder, malt extract and a packet of lemon pie mix that have gone past their BB dates. So it will be chocolate brownies, malt loaf and a lemon meringue pie on the menu.

Just one swapping of nights this last week as needed easy tea after being late home. I’m out a couple of days this coming week, which will involve eating out 😋. Still struggled to come up with a week’s worth of meals, think it’s because we’re in between cold weather food and warm weather food…anyway, all sorted and smallish shop done this afternoon.
Sat - smoked salmon and cream cheese bagel (out for lunch)
Sun - warm potato, halloumi and green bean salad
Mon - cheese and biscuits if I need anything (day out)
Tues - beans on toast
Wed - steak and noodle stir fry
Thurs - prawn and chorizo rice
Fri - sausage and mushroom gnocchi4 -
