Stuck to meal plan last week, but I couldn't make the pizza which was moved forward from the week before, as still no cheese. So I made it into a dish with pesto and spaghetti.
Not feeling the veg crumble anymore either.

This is this week's plan. Stuck to everything so far, as up to today it has been filled in with what has been ate.

I've just realised I've missed out Monday. I will start as a fresh week, but it will probably be whatever flavour tofu wasn't eaten on the Sunday

Fresh sardines, salsa verde, spinach, green beans, mushrooms, fruit salad
sea food risotto, pineapple and kefir
steak, egg, mushrooms, sweet potato wedges, pineapple clafoutis
spanakopita, Greek salad, no idea what to do for dessert x2
macaroni cheese but with lots of veg and a bit of bacon

I need inspiration for puds !  I usually have fresh fruit to make sure I get my five a day and if I have the oven on, I make a clafoutis, as it’s dead easy.  Maybe I’ll make a crumble for a change.

Slight change to last week's meal plan as we had h/m chicken, bacon & mushroom pasties on Tuesday so all the other meals got shuffled on a day which is just as well since the Co-op didn't have the fresh cod fillets that I wanted for today.  :'(   On the baking front, the malt loaf was exceedingly good (and there's a spare in the freezer for "later"), the chocolate brownies are still waiting to be made (short of eggs) and the lemon meringue pie turned into lemon cups - the lemon powder mix, single cream and an egg yolk.

    This week's plan:

Sat - Chilli, jacket potato with strudel (from Xmas shop) & cream for afters
Sun - H/m cottage pie (cooked meat base from freezer), broccoli, h/m pickled red cabbage
Mon - Steak & kidney pie (from pantry stash), mash, mushy peas
    Tue - Gammon salad
Wed - Cod cakes, chips, mushy peas
Thu - Sausage, mash, veg (to be decided)
    Fri - Cod fillets (hopefully)
Be kind to others and to yourself too.

I located the hoisin sauce,  which I couldn't find when I wanted it. So had that Friday.

Tonight i had a couple of potato cakes as I wasn't hungry from dinner. GD had ravioli and peas

Coming week's plan is as follows:

GC Jan £101.91/£150 Feb £70.96/150 Mar £100.43/150 Apr £108.45 app/150 May £149.70/150 Jun £155.15/150 July £74.69/£150 (includes food, toiletries and cleaning from 13th to 12th of each month. One person vegan household with occasional visitors)

A slight change for me too.  The spanakopita I pulled out of the freezer yesterday was smaller than I thought and I was hungry so I ate  the lot instead of making it do two days.  However I snagged a cheap bag of ripen at home avocados last week and they are just about ready so today I will experiment with nachos, which I’ve never made before.
