Stuck to the plan last week, except I had Cottage pie on Sunday instead of bean burgers. A little late with this week's meal plan, but posting it anyway incase it gives somebody else inspiration
- Monday :
Amy Sheppard's bean burgers with sweet potato fries 🫘🍠
These were really nice, but just need some tweaking as I didn't use a tin like she suggests. I used dried cooked beans; and so the consistency of the mixture was quite wet, once I'd tried to mix up some mexican sauce. I'd leave it out next.time.and use dried seasonings and add it in the form of salsa or something. It made five good sized burgers though, and Amy got four.

Stuck to the meal plan last week apart from a slight shuffle about. Ate chilli twice and leftovers, so didn't have to have all the meals I'd planned.

Ended up having Jackfruit 'Tuna' pasta one day. So, a few meals have carried forward again.
I'm not going to write the days down this week, as not sure of my DD2's shifts yet or how the weather will be. So subject to change ...

Meal plan has changed a little.
Last night we had Butter curry to use up some kale, and there's two portions left over
I want to now make Thai chilli tofu and noodles, and Tofish chips and peas, the next two days, as DD2 bought some tofu fish from Aldi!
I will carry the pizza and Manti forward as I have the ingredients for Manti, but not sure if there's enough mozzarella for pizza. I won't be going out specially for more if not. I also fancy a chip shop style curry with chips one day.
The rest of the week up until the 13th and further I will be living out of the freezer and cupboards.
I know I have Moqueca, Jamaican stew, pad Thai and two portions of BBQ jackfruit. If it turns hot I will have jackfruit pasta for one or two evening meals. So I'm only going to buy ingredients I need and don't have in already. To be honest ,I'm not eating much at the moment anyway, as my medication is making me feel a bit sick.
Fingers crossed I can stay out of the shops🤞🏻

I ended up having homemade celery soup tonight, even though it's quite warm here; with leftover jasmine rice from last night, and some homemade croutons. Just nice to settle my stomach a bit.
