Hello everyone. I'm just back from my favourite Community Fridge where, for a £1 voluntary donation, I collected so much food. So much. I won't list it all, but based on everything which has now been shoehorned into my fridge and freezers, my menu plan for the coming week will be:
Thursday
Breakfast - Pret porridge pot with blueberries
Lunch : Pret hoisin duck wrap, small bottle of M&S gazpacho
Dinner : Roasted portobello mushrooms stuffed with minced beef, garlic and spinach
Friday
Breakfast - Pret bircher muesli pot with grated apple
Lunch : Pret roast chicken sandwich, small bottle of M&S gazpacho
Dinner : King oyster mushroom and veg stir fry with black bean sauce
Saturday
Breakfast - Scrambled egg on wholemeal toast
Lunch : Carrot and lentil soup
Dinner : Italian meatballs and pasta with side salad
Sunday
Breakfast - Bacon, egg, hash brown and tomato
Lunch : Carrot and lentil soup, sourdough croutons
Dinner : Roasted cauliflower cheese
Monday
Breakfast - Toast or cereal
Lunch : King oyster mushroom slices in garlic and parsley butter
Dinner : Chicken chow mein
Tuesday
Breakfast - Toast or cereal
Lunch : Curried parsnip soup, sourdough croutons
Dinner : Carrot and sweet potato spicy fritters with salad
Wednesday
Breakfast - Porridge
Lunch : Roast beef and onion sandwich
Dinner : Black bean dhal, naan bread and vegetable samosa
I also have strawberries, blueberries, raspberries, bananas, easy peelers, grapes, fresh peaches, apples and pears for desserts/snacks, along with a large carton of Greek yogurt and 4 pints filtered semi skimmed milk. In addition I picked up very large and healthy potted herbs (curly leaf parsley and rosemary) which I have planted out in the herb garden.
Not bad for £1
