I also had fresh apricots to use, so I de-stoned them and then poached them in a little freshly squeezed orange juice and a glug of runny honey. That will be desserts for the next couple of days.

    I had various pans on the hob at once and was distracted by also being on a phone call, and made the stupid mistake of adding honey to the leeks as they were gently frying, instead of the apricots! Thankfully only about a teaspoon’s worth, and I think I have saved it by adding a pinch of ground cumin and a little sprinkle of curry powder - it actually tastes quite good, maybe I have invented something 🤣🤣. I quite like a mild curry taste in cauliflower cheese.

    So tonight will be finishing up the last of some mixed vegetable soup with a chunk of sourdough for dunking
    Sunday and Monday will be the cauliflower/potato/leek/spinach cheese
    Tuesday I have some boneless KFC portions in the freezer which I must remember to defrost - they will be air fried, and served with a salad.
    Wednesday will be aubergine daal with a little basmati rice and a naan bread
    You're always welcome CJ. I get people have busy  lives or they fall out of meal planning. I'm guilty of it too.
    I need to sort out my freezer as there's a few things I know I have but can't find in there.
    You made me laugh when you said about the honey. So easily done when distracted. It's more annoying when you make the effort to prep foods and it doesn't work out, then you feel like all the prep was a waste.
    I hope you enjoy your cauliflower cheese.

    I'm in awe of the community fridge hauls you get. I thought I was on a good thing; but for a £17, not as much a bargain as the stuff you get

    @K9sandFelines I’m interested to see that you’re making jackfruit mayo this week - do you just drain it, shred it and mix it with mayo? I have a couple of tins of jackfruit which they were handing out at the Community Fridge several weeks ago and I haven’t decided what to do with it yet. It’s new to me and I’m out of my comfort zone! I was thinking a jackfruit version of coronation chicken, maybe.

    I finished up Wednesday’s aubergine daal tonight, I would definitely make this again but wouldn’t put as much curry paste in it (or would use a milder one) next time.

    I have lots of veg to use up and whilst the weather continues to be so hot I plan to make a big jug of nice icy cold gazpacho for lunches.

    There are mushrooms to be used up, so I’ll make garlicky mushrooms on toast tomorrow night. Maybe with added baby spinach.

    The rest of the mushrooms will be part of a stir fry for Saturday.  That’s as much as I’ve planned so far!

    Jackfruit is honestly so versatile, and to be honest doesn't taste of much, so it's used more for texture than anything. I normally deseed it and chop off the harder parts.I then freeze them for a later date ( blitzed in food processor with other stuff they make a nice base for burgers). Then for jackfruit mayo I'll shred it and add lemon juice, dill, gherkins, capers and seaweed  (if I have it), fish sauce and the mayo. Mix it all in the same as tuna. Same concept for coronation jackfruit, which I've had multiple times too.
    It's also great pan fried till it crisps up a bit and then added to a BBQ sauce for a pulled pork style meal.
    I'll also add it in curries sometimes too. It depends if Im lacking in ingredients for something, and it needs bulking out with some protein.

    Thursday, Saturday and Sundays meals will carry over. I've been mostly eating vegan protein veggies and rice, so the meal plan has gone on for two weeks instead of one.

    My last tofu from Heron defrosted into crumbles, so will do an all day breakfast style tea tomorrow using it as tofu scramble ( made into wraps for dinner)

    Just need to think of another three meals. I didn't go to the Bread and Butter thing today, but still have plenty of food in. I know I have orange sauce in the freezer and a tomato sauce/UFO;  and some mince in the freezer , so I could.make that into meatballs. So that's potentially two meals. I also have mushrooms still to use up

    Two meals have carried over, but I have no potatoes at the moment so can't make them.

    Edit : The UFO was BBQ jackfruit. I still have the chopped tomatoes, which I will use in the Cajun pasta 
    Burritos ate for dinner, ( lunch in other parts of the UK), but I have spare mixture so will make up more as far as it will stretch.

    So here's a rough plan for this week.



     A few observations and changes ...

    It was too hot for the sausage meal, so had the sprouts and bendy carrots as a side for the meatballs and flatbread ( which was disappointing. I think it's due to the Tesco vegan mince from the fridge section ( won't buy again)).
    The Fasoulia Nashfe was nice but like a fancy baked beans really, but with added jackfruit.
    Can't do Hamburger helper as no mince left ( thankfully). I'll stick to dehydrated soya or the frozen vegan mince in the future).
    Having the roasted veg pasta and pesto tonight.
    Weekend may be picky bits, as it's DD1s birthday.
    So that leaves me with and Kiev's, and leftovers for the other two days. Or if I have chips then jacket potato still and leftovers.

    Off to plan next weeks meals now. Will amend depending on Bread and Butter thing collection and also, any bits leftover from Saturday. Going to check the weather too !!
