So at the weekend I had burger, l can't remember Saturday's tea and Sunday was Moroccan stew with couscous
I've ended up doing a shop so have loads in.
This week's plan is as followsVegan Egg fried rice 🍚 or Vegan spanish omelette and beans 🍳✅
I also have leftover Moroccan stew and couscous.
Toad in the hole, carrots and sprouts 🥕
Vegan salmon in lime/ mango and coriander seasoning with new potatoes and green beans 🍣 🍋🟩 ✅
Black bean and pineapple stew with rice 🍍🍚
Jacket potato with filling and salad 🥔 🧀 🥗
Taco soup with sweet potato wedges, avocado and tortilla chips 🌮 🍠 🥑✅
Pizza 🍕
Laksa 🍛✅
Will work around what is needing using up first, and avoid anything that means extras from the shop. Seitan - thinking stir-fry ( as I have cabbage in the fridge and bean sprouts in the freezer)
Vegan Sausages (past their bb) ✅ - thinking English breakfast with these
Vegan ravioli (past their bb) and one of the salmon fillets ✅
Leftover Moroccan stew and couscous ✅
At least that's a few less meals to think up for next week!

I ended up making cabbage soup with the leftover cabbage and the sausages.This turned out like a stew actually, so I served it with mash. So, I still have that to use with some mash. ✅
Also, the Seitan, and some spicy peanut sauce (still in the fridge). This turned into tofu as the Seitan had gone off (my fault for not getting to it sooner)! ✅
The rest of the bits got used, and I froze the 'salmon' fillets for another meal.
So, the meal plan is as follows:
1)Cabbage stew and mash 🥬 🥔 ✅
2)Spicy peanut Seitan noodles 🍜 ✅
3)Black bean and pineapple stew 🍲 🍍 ✅
4)Pizza and corn on the cob🍕 🌽 ✅
5)Possibly, 'chicken', sweet potato, peach and walnuts with kale (need to buy the 'chicken' fillet ✅ unless I make more seitan) or Lemon, white bean, kale and orzo soup 🍑
6)Roasted veg pasta 🍅🌰 🥒🧄🌽🫒 turned into Deconstructed Manti with courgette ✅
Not sure if DD1 and GD here on weekend,.so if so that will be something they like.
If they don't visit, I'm pretty sure there'll be leftovers or I will finally do the jacket potato

Not meal planning next week , as I've mainly been having the veg from the TGTG box with noodles or rice and tofu. I've finally used all the stir fry bits that weren't in the freezer. So as of Wednesday, this is the meal plan.
I'll probably repeat tonight's meal but with the sweet potato originally planned, as I had rice.

Not doing a meal plan this week. Going to just try and work my way through the freezer.
I've made some Ital stew with some butternut squash and cabbage that needed using (still have the cabbage)
Going to make some sort of burgers out of Seitan (maybe).
In the freezer, I also have vegan mince, one portion of vegan Hoisin duck and tofu. I've also got pizza dough and salami in the freezer, and mozzarella in the fridge. So some meals will be obvious.
Should be enough to last another week or more. Probably will just need a few top ups of veg. I've lots of grapes, apples and some bananas.Plus frozen fruit; so mostly all good.
