W - Hunter's chicken, veg, potatoes
T- Stuffed pasta with tomato and veg sauce.

Ah poop, just wrote biggest post and lost it all. Fourteen different meals done (although some are one portion) some more. Mostly from freezer, others I will be cooking from scratch in order to use other bits up. I have GD and DDs visiting this week, so the meals may not technically stretch to two weeks; as we all have varying tastes and they won't all feed more than one.
Last week I didn't make the pot pie and froze the last bit of curried jackfruit (as I'm not a lover of the same meal every night).

Out tonight so starting from tomorrow:
Sun - salmon with creamy caper sauce, roast new potatoes, tenderstem broccoli
Mon - tuna, green bean and pesto pasta
Tues - beans on toast
Wed - pilaf with prawns and peas
Thurs - tuna steak with Mediterranean lentils, spinach and sun dried tomatoes
Fri - tapas/mezze
Will make nana’s magic soup for work lunches 😋1 -
I am still eating my way through the meals on the menu plan above. Even though it's been eleven days. I've got more meals left than days, as theres been lots of leftovers in-between too.
Yesterday I scored lucky with some YS bits so that means I've managed to add to the meal plan. One item was (vegan) mince, which I needed. Another item was s/f 'chicken' fillets which will be great in wraps.I also got vegan prawns so may do fried rice with those. Some sausages and a "chicken" crown which I'm freezing for the 25th.
I've also added hamburger helper type pasta to the list.
McDonald's style wraps with one burger and with the other I will have it as is on some buns I baked on Tuesday.
So this should last til almost the end of the month, if not longer depending on leftovers.

Away some of last week but I did plan from Wednesday:
Wed - tuna, broccoli and pesto pasta
Thurs - prawn and broccoli Thai curry, noodles
Fri - sausage and spinach gnocchi
Sat - mezze
Sun - roast chicken, roast potatoes and carrots, green veg
Mon - chicken and pesto pasta, green veg
Tues - beans on toast
Wed - prawn and red pepper egg fried rice
Thurs - tuna steak with lentils, spinach and sun dried tomatoes
Fri - tomato, red pepper and mozzarella gnocchi2 -

I'm still ongoing with previous meals here.
Tonight I've made German Onion pie, which I'll have Wednesday (with some salad I'm picking up tomorrow from olio) 🥧🥗
I also want to try making Aloo pie or Aloo paratha with some leftover tinned potatoes 🥔
I've got Meatballs and pasta still to have. I will have this tonight (Mon) for tea; as I made a pizza sauce at the weekend,.so this can double as my pasta sauce 🍝✅
Carribbean Red bean stew and cornbread (Tues) 🍲🌽 ✅
Traditional stew and dumplings ( if I haven't made the Aloo pie with potatoes) 🍲 🥔 🥧
Mixed bean chilli with tortilla chips, sweet potatoes and sides chilli 🌶️🍠🥑🍅 ✅

My freezers are full, and my cupboards, so I have scope for even more meals ❄️📄
I can't remember what else I've put on my meal plan board, so will come back and edit or do another week 👍🏻

Still wading through the meal plan above. Everything eeking out nicely.
Not picked up potatoes yet; so I haven't been able to have the sausage and mash or the Aloo pie/paratha. Been hoping I can get some decent priced potatoes, or some on TGTG or Olio (even better).
~ I made a lovely Jamaican curry last night but with added pineapple 🍍. I have a small amount of leftovers of that.
~ I have leftover "Shrimpiee" so I'm going to make something I seen last night on The Everyday Mumma channel on YT ( Australian lady just starting out. Loads of ideas that I can tweak to suit being vegan). It like a creamy chilli and lemon pasta. I only have spaghetti though not pasta 🍤
~Tofu and noodles 🍜
~Also, still have the Moroccan and couscous 🍲
~ Maybe Kebab 🥙, got some nice kebab flatbread from Olio. ( Need to make some Seitan now I've finally got v.w.g) ✅
~ Pizza scone 🍕 ( saw this on a YT channel above. It looked great. Will have to use normal cheese as don't have any vegan mozzarella left).
~ Massaman meatballs 🍛( I will make these from v.w.g and jackfruit. Again, YT channel from above).
~Thai coconut pumpkin soup 🍵 (I will use butternut squash.Again, same channel as above.) ✅
