Hi everyone,
Not posted here for a while but I'm starting back work full time on Tuesday and I'm feeling the need to get OR-GAN-ISED!
Here's me:
Spanish Chicken Casserole - slow cooked chicken thighs, frozen peppers, onions, tinned toms, spices. Served with rice
Baked med fish - fish pie mix, frozen med veg, tinned toms, quinoa
Venison shepherd's pie
Fish, chips, green beans, HM bread
Veggie chilli - already in the freezer to be heated up and served with micro rice.
Got the meat on 3 for £12 at Ocado + chicken thighs.
Veg was buy 2 get 1 free
Then added bread flour
Now need to decide on school snacks...
Looking forward to catching up with you all and getting lots of ideas!

Everyone seems to have stopped posting, including me; as I was helping my DD1 with moving and settling in.
This week's plan:
8) Ital stew ✅
9) Kiev, chips and peas ✅
10) Manti 🍝
11) Sweet chilli tofu and rice 🍚 *changed to satay ✅
12) Dhal and roasted cauliflower with side ✅
13) Pizza ( salami) 🍕✅

I will come back on Tuesday with a definitive meal plan, as that's when I go to the bread and butter thing. So need to make the most use of what I end up collecting.
I didn't have Manti; but instead Caribbean curry, rice and peas ✅. So I will carry that forward.
Going to try and make Bhamia too as I have okra ✅
Ive also still got cauliflower to use up, so I might try Dahl again with roasted cauliflower, as I enjoyed that alot.
And I've bought fishless fillets from Sainsbury's.
So not many meals left to think of really.

The other meal this week I'll have, will be BBQ jackfruit and noodles.
I will also do orange tofu at some point, as I have a ton of easy peelers to use .
Most of the Bread and Butter collection was things I can already pair with meals I had planned.

I've still got the following to have.
I've had alot of leftovers so it meant I didn't have to make the meals planned as soon.
Dahl and roasted Cauliflower ✅
Orange tofu ✅
Manti ( I had Hamburger Helper instead) ✅
BBQ jackfruit and noodles
Black bean and pineapple stew and couscous or something else (this will do two or more meals) ✅
Fishless fillets, chips and peas.✅

For some reason not ate most of these. Think it was too hot, or didn't fancy them.
Last night I had the Dahl but no cauliflower left. Had it with pakora, bhajis and samosa and half a naan.
I've still got orange sauce to use up, and all the meals not ticked off above
Jamaican rundown and rice.
Three freezer meals - Jamaican Ital stew, Jamaican curry ✅ and Black bean and pineapple stew.
That should take me to the end of my grocery challenge month.

I’m a silent reader. I’m very interested in your meal planning thread although I’ve never posted anything. We are having Spaghetti Bolognaise tonight with yellow sticker 5% pork mince. Since reading these threads I’ve started making my own sauce rather than using a jar and I’m having some home made French Onion soup for lunch. Yellow sticker beef tomorrow and then the leftovers in a pie on Monday. Thanks for all of your tips and motivation. I’ve learnt so much from reading your posts.1

I’m a silent reader too @K9sandFelines, I really should take the time to post as it would keep me on track. I have various fruits and veg to use up from the Community Fridge, so this morning I made several portions of cauliflower cheese (zhuzhed-up with some diced cooked potato, some sliced and sautéed leeks, and a handful of baby spinach leaves). I also had fresh apricots to use, so I de-stoned them and then poached them in a little freshly squeezed orange juice and a glug of runny honey. That will be desserts for the next couple of days.
I had various pans on the hob at once and was distracted by also being on a phone call, and made the stupid mistake of adding honey to the leeks as they were gently frying, instead of the apricots! Thankfully only about a teaspoon’s worth, and I think I have saved it by adding a pinch of ground cumin and a little sprinkle of curry powder - it actually tastes quite good, maybe I have invented something 🤣🤣. I quite like a mild curry taste in cauliflower cheese.
So tonight will be finishing up the last of some mixed vegetable soup with a chunk of sourdough for dunking
Sunday and Monday will be the cauliflower/potato/leek/spinach cheese
Tuesday I have some boneless KFC portions in the freezer which I must remember to defrost - they will be air fried, and served with a salad.
Wednesday will be aubergine daal with a little basmati rice and a naan bread3
