    Well the rain has been non stop, the amount of water about again is unbelievable, we also had snow but that soon turned to rain again, those poor folks that got flooded Xmas are very close again 😥😥  Now the wind is battering!
    I have had LM sausage and mushroom egg wraps with baby plum toms and picky tea 😋😋

    Also i must drink roughly the same amount each day as yesterday was more or less the same as Thurs

    Morning all.  It's lovely today so much nicer than yesterday.  The forecast was for being very cold but it's actually quite pleasant out there.  Would have been a nice day to do some washing but unfortunately I haven't got a machine load of anything at the moment - just part loads so not worth doing!

    Had to pop to the farm shop as run out of fruit and veg apart from a couple of carrots and a handful of grapes.

    Today's plan:

    B - fry up with sausages - P; S; F; 2
    L - LO chicken and bean casserole; mash
    D - Iceland extra large lamb shank with rosemary and mint gravy; roast potatoes, roasted carrots, onions, peppers, kale & green beans - P; S; F; 3.5

    HEA - milk
    HEB - none planned but may have a couple of Ryvita or an Alpen Light
    Syns - 2 sausages 2; lamb shank 3.5

    Is it the first time you've tried that Iceland  lamb shank denise? I'd like to know if you can recommend it. It always surprises me how low syn many of them can be.  We're having lamb today but it's a rolled shoulder. Not sure whether to unroll it a bit and stuff it or do stuffing balls instead.  🤔 I notice that you often do peppers with a roast dinner. Do you mix them with onions/slice them/like a tray bake? I'm always on the look out for different sides for a change. 

    I got a text from my consultant yesterday which was much appreciated. Some members of the group go on the Facebook page  and/or do Zoom but I don't so it was nice that she remembered me. It was just asking how I was doing so I replied that I'm sticking at it!! 😁 I'll probably still be around the top end of target range when groups can reopen but I'm under control and that's what matters!! 😁

    No casserole left as we polished it all off last night😋. Now I've made some stew and more chilli I'm not short of lunch ideas when I haven't any leftovers. 

    Today's EE plan-
    B- NAS grapefruit squash, baked beans (F), HEB toast, fried egg, bacon (P), HEA milk
    L- beef stew (P,S,F)
    D- roast lamb (P), roast SW potatoes and parsnips (F) carrots, swede, cabbages, cauli, broccoli (S)
    Syns- gravy 4, weekend wine😋

    I just cut quite big pieces of pepper and halve or quarter onions depending on size and roast them along with the carrots, again quite large pieces.  As I'm not doing a joint in the oven today they'll all be roasted in the same tin as the potatoes, obviously going in later than the potatoes and carrots which definitely need more time.

    This is the 2nd time we'll have had these lamb shanks as we bought 2 boxes to use up some Love 2 Shop vouchers DH got when he bought new tyres for the car!  Iceland is one of the few places which I would be able to use them at so bought a couple of boxes of the chilled ones and froze them.  Have to say we weren't overly impressed with the first ones which I did as the boil in the bag method, so today I'm going to try microwaving it to see if that's any better.  There was absolutely masses of gravy in the bag which I've frozen to use when we have roast lamb in the future.  No doubt they'll be more with the ones I cook today - so will freeze the excess of that as well.  We've had the frozen ones before and we actually preferred those although they're a bit smaller (and cheaper!).  The frozen ones are also lower syn at 2 each.

    They certainly work out cheaper than buying fresh ones from the butchers - our butchers advertised of Faceache last week that they were selling shanks at £4.25 each!  These used to be virtually given away because no one wanted them years ago.

    Thanks denise. We went to an Argentinian steak restaurant in Leiden pre pandemic (remember that?? ☹️) and they served strips of red pepper as a side and it was delicious. It's something different and bags of peppers have plenty of red and yellow in at the moment.

    I suppose it's trial and error with the different brands of lamb shank but I agree that they are silly prices in the butcher's. I've taken to freezing LO gravy too especially from HB steaks. It's virtually syn free and very good with sausage and mash. 

    I got 8 portions (4 meals for 2) from the veggie chilli. Not bad for 3 tins of various beans, tomatoes and a few veggies and spices.

    As I synned the lamb shanks at the time of eating I won't be synning the gravy when we have it as I'm sure that's where most of the syns are.  I only ever have about a Tbs of gravy anyway so don't bother synning it.

    That's not bad at all with the veggie chilli, makes it a really cheap meal too.  I've bought some mixed dried beans to try.  I'd been looking for some for a long time as I often make a mixed bean goulash, in fact I've cooked some this morning to use for a goulash tomorrow.  Hope it works well as it's far cheaper and also has a mix of 10 different beans in it, some of which I've never even heard of!  If they turn out OK I may well cook a big batch and make a veg chilli and a veg curry in the SC and portion up - that would get a good number of meals in the freezer for the future.

    Edit:  We've eaten now and the lamb shanks were much better microwaved than they were when done as boil in the bag.  Was quite surprised how much better they were.

    Another 2 "pucks" of rosemary and mint gravy to in the freezer (I freeze in a silicon muffin tray so they pop out easily once frozen).

    I like lamb but dh doesn't and i always think those lamb shanks won;t be enough for me, little Mis Piggy features 🤣🤣🤣🤣
    I has BLT egg wraps early and roast beef dinner, i am just making pudding 😋"pineapple pancakes" aka sweet omelette and ice cream 😂

    There was plenty of meat on the large shanks we had tonight bubbs; certainly as much meat as you've got tonight if not a bit more.  I'm not a small eater either - although you probably have a bit more veg than I do but then I also have at least half a dozen roasties!  I cooked too many roasties today so I've no doubt me and DH will be eating them cold later with some mustard pickle - it's what we usually do on a Sunday night!

    I might try them then, but there is about 7 whole slices of beef there 🤣🤣🤣 its all piled ontop of each other .

    Morning all, 2.25 pounds off this week, really pleased with that. I think I got stuck in a rut of having the same kind of things each week so I mixed it up last week and had more salads etc and it seems to have worked.

    This week its chicken salads etc for lunches and due to the low iron levels I’m going to have steak mid-week and I have some pork steaks in the fridge too. Tonight I am having pork steak, mashed turnip, carrots and peas. Not decided yet if there will be a potato or gravy will see!

    I usually drink somewhere between 2-3 litres a day, usually with cordial. I don’t drink tea or coffee and I rarely drink alcohol although I can foresee some drinking nights in the future after pandemic
