Making a lasagne today, using aubergine, beef mince.
I make Keto/Carnivore version using Edam slices for the pasta layers 👍
Chucked it all together and it was vile, still got half left, I will bin it tomorrow, not at my best and shouldn`t have bothered, had to send my dog over the rainbow bridge at 1. p.m.
My first attempt at this was also not great and I learned where I went wrong which was that I needed to sprinkle salt on the aubergine and leave it for 20 mins then wash it as it takes some moisture out. I then fried in olive oil before using as 'pasta' which worked. I use this and thinly sliced celeriac for a moussaka dish too.
Sometimes use a low carb wrap as pasta and have made it using diet doctor recipe which has some kind of pasta sub included which works if you can keep it thin enough.
I get seduced by aubergine, the sleek glossy skin, and it`s the skin I hate, have seen loads of recipes for "pasta" subs or swaps for lasagne layers, should have used gouda, have a pack in fridge, and chuckked the aubergine in the ragu, I love celeriac but hard to find at the moment, will have to search out the low carb wraps.
Wittering now to keep my head busy, loads of chicken thighs in the fridge, in packs of three, I always bought a months worth at a time, dog had one a day, and restocked last week.
Do I need it or just want it.

Pamsdish so sorry to hear about your dog,  its just awful when you have to say goodbye :(

re Lasagna I make the ragu as normal ie ,  dice carrots, celery and onion and sweat off then add Mince, tomatoes, herbs etc.   for the sauce i heat double cream and cheddar and for the 'lasagna' either butternut squash, mushrooms or courgettes.   layer as you would for an ordinary lasagna and bake for approx 30mins
lowcarb wraps are only available online that i have seen.   i buy packs of 8 for £3.99 , usually get enough to get free postage and freeze them

Thanks @shykins, will have a look online for the wraps, I mixed cream and cream cheese for the sauce.
I am having a pack of kippers today with a couple of poached eggs, going to make some low carb rolls today.
Where do you get your wraps from @shykins

@pamsdish really sorry to hear about your dog.

I get low carb wraps from o-cado. I don't shop there all the time...just when it is a treat.

interesting about the Sainsbury ones but i notice they arent on their online shop list, wonder if its just in america?
not seen any Keto breads anywhere unfortunately,  Aldi do one but only in america and Lidl stopped doing their lowcarb rolls grrr.      i did buy some Lizza mixes for bread but wasnt that keen to be honest.  i do have an easy recipe for one if you want it?

I have been making my own bread, it`s linseeds and vital wheat gluten based, a bit chewy,  per 100g, carbs 3.4g, protein 8.8g, fat 3.7g cals 85g not bacon sandwich material, I find it`s better made into rolls for that. I like seedy bread, but I try not to buy any as it tempts me too much. I would be interested @shykins

sounds like yours maybe similar to mine pamsdish
100g ground linseed,   100g ground almonds,  1/2 tspn baking powder,  1-2 teaspoon cream,  2 eggs
mix together, it should be like a thick lumpy porridge consistency.   bung in a plastic sandwich size tupperware, microwave 3 minutes.
you can vary the linseed/ground almonds ratio without much problem.   can also add some sweetener (i use Davinci flavoured syrups)  to make into a cake, and/or add cocoa powder for chocolate cake
