Unexpectedly out to lunch yesterday, lovely meal, did eat some of the mashed potato, but will do better today to balance it.
I had a piece of beef waiting to be cooked, I will cook it today, going to try the dehydrate in the N1nja, people keep reporting satisfactory results, I prefer rare. That will be today and tomorrow and my sister is visiting Wednesday, she is low carb too, need to work out what we are going to eat.
I will be going S.I.L. in Cardiff Sunday so no meal plan this week. Will be having to use up courgette and aubergines before then.Do I need it or just want it.0 -
Have just done my first lot of cauliflower rice and it was really good.
I grated it myself with a box grater and then fried it with some oil and butter; eaten with the h/m chilli.
It's a bit messy to make but might use the mini chopper next time and possibly freeze some individual sized portions.1 -
I always use my processer, any left over from the head, chops stalks and all, freezes well.Do I need it or just want it.0

I’m not that low carb compared to many (no interest in going keto) but the last month I’ve been going “lower carb”. My diet previously was based on carbs for all meals (lots of pasta, bread and potatoes), home baking & toast for snacks, treating myself with lots of chocolate and crisps… needless to say I never lost the baby weight from my 3yo (1st) then put an extra 2st on over the lockdowns.My “low carbish” diet is working well and I’ve managed 2lb a week weight loss over the month.Basically I’m not worrying about root veg or pulses; I’ve cut back a bit on fruit but not banished altogether; but I have almost entirely stopped eating sweet stuff and drinking alcohol. I’m eating 1x carb based meal (but measured portions) on workout days (5-6 days a week) - so the usual things my kids like eg pasta, a burger or a rice dish - but all other meals I’m avoiding grains and potatoes. I’ve stuck to only one snack a day and only if I need it, and this is always nuts, Greek yoghurt or a bit of fruit.Even with this generous interpretation of low carb, it’s still costing me more for groceries than before! Following for tips on batch prep and reducing waste so I can hopefully stay healthy but also reduce the budget somewhat 🤞🏼 Unfortunately living with three other people means I still need to buy carbs and treats for them, so I’m not even really saving much on all the things I’ve cut out!
Meals today are:
B - banana & chocolate protein milkshake
L - salmon, ratatouille and asparagus
S - if I need it later, I’ll have some nuts
D - griddled tikka chicken, some kind of curry sauce and veg, maybe have a scoop of rice as I’m working out this evening but will see if I really want it
Obviously eating salmon for lunch is expensive, but then it is tasty and healthy 😆 I did make double the lunch recipe so have a second for tomorrow; leftover curry dinner will be my lunch later on in the week.Part time working mum | Married in 2014 | DS born 2015 & DD born 2018
