Next week's menu, planning a trip to my friends on Thursday, staying 10 days, as I am the main cook whilst there will probably stay close to track.
Do I need it or just want it.1 -
Morning
I'm starting LC tomorrow so have been looking through this thread for recipe ideas, thanks to everyone for sharing them!
I'm just wondering if many people manage to be dairy-free as well as LC?
I have found quite a few dinners that my whole family could eat, but my issue is breakfasts and lunches.

Welcome @RandomOne, I tend to eat one meal a day, OMAD, I don`t eat much dairy but that`s my choice, there is lots of info on the internet, if I am hungry early, I like poached eggs on toast, if you are dairy intolerant, and is it packed lunches you are looking for, sausage, or any cooked meat would be good.Do I need it or just want it.2

If you're lactose intolereant, quite a few supermarkets carry lactose-free milk, cream, Cheddar, spreadable cheese stuff like Philadelphia and Feta. Since lactose is the milk sugar, these should all be lower carb than regular versions.
I think that vegan cheese-like products might well be carby and are certainly highl processed. If you're a vegetarian I think you would struggle with keto or low carb. I have one veggie keto recipe book, Keto For Vegetarians Lisa Danielson Rockridge Press 9781641525503 and that's not bad.
Breakfasts on a work/school morning - Soft-boiled egg or a full fat yogurt with a few fresh berries added. My husband can't face breakfast at 5am, so he takes an individual full fat yogurt with him, to have at his desk at 0730.
Lunches: I buy stuff so my husband can do his own pick n mix lunches eg
Prosciutto (Parma ham), Torchon ham, chorizo, salami, kabanos, Peperami, corned beef..Sliced roasted beef, pork, lamb. Chunks of home-made pork crackling. Pâté (meat ones). Canned fish eg sardines, tuna, sprats, pilchards, mackerel. Morecombe Bay potted shrimps, rollmops, jellied eels. Pickled cockles, pickled onions. Preserved lemons. Olives of all sorts. Walkers Salt n Shake crisps (small bag 12.5g carbs). Mini raisin boxes (10g carbs). Cherry tomatoes, spring onions, peeled carrots, cucumber, celery sticks, a few grapes, a few berries, full fat unsweetened yogurt. Wide variety of cheeses in portions or slices or home-cut wedges. Wedges of home-made frittata. Air-dried keto snacks. Home-made sliced or diced beetroot (no added sugar or agave syrup), Mayo if can be kept cold. Coleslaw (check carbs some have added sugar) or home-made if can be kept cold., Sugar free keto bars/cookies. Hard-boiled eggs, pickled eggs. Cold crispy bacon. Cold sausages. GranoVita vegetarian pâtés,
If you;re doing lunches for several people, and spmething like a pre-prepared salad or houmous looks too carby, work out the carbs if divided by two or four people. Houmous can go in a teeny tub, salad can be used as topping on home-made salad.
McDonalds etc the meat + pickles + salad, bits, no buns, nothing but mayo. Side salads, mayo only, no croutons, dressings.2 -
Thank you so much, everyone. I'm definitely not vegetarian or lactose intolerant, I just find that dairy makes me super congested.
@MrsStepford those are some brilliant ideas, thank you! I like the sounds of everything you listed, so that is a good place to start.3 -
Last night my husband had a nightmare journey home from the office. M20 was closed between two junctions, huge queues on M20, M2, A2. A20. So he jumped off at Sevenoaks and took A roads and little lanes through loads of villages which he hadn't visited in years. He kept calling me from the car saying 'Your Pa's office has been demolished for flats', 'that butchers your mother went to, is still there !' and 'you wouldn't recognise XYZ'.. so we're buying a webcam so I can watch too as shielding.
I found a supermarket (Sainsbury's) and husband nipped in there for stir fry veg, gluten free soy sauce and mushrooms. We enjoyed the stir fry. We have a proper wok but we don't have a low carb Chinese cookbook and haven't had stir fries for years.
Any recommendations please?
We use Holland & Barrett Organic Konjac Rice 270g | Holland & Barrett (hollandandbarrett.com) for risotto. I came across Yutaka Organic Shirataki Konjac Noodles, 313 g - Japan Centre for 1.85, and I'm going to try those.
