    I've just remembered that a drop (or two :D ) of Drambuie makes it taste just like Baileys!

    If you are diabetic you need to be careful about drinking alcohol. Even if it's not sugary as such, that doesn't mean it's safe for diabetic people to drink in more than small quantities.

    One of the problems is that, for people on insulin or other medications, alcohol can cause hypoglycaemia by interfering with glucose release from the liver.

    Anyone with diabetes should speak to their doctor, diabetes nurse, or other reliable source to find out how much alcohol is safe for them to drink and how they should do so (e.g. altering medication times or doses when drinking). They should not assume that alcohol is OK if it's not sugary.

    Also (sadly) alcohol is not recommended for people with ME/CFS as it puts a strain on the liver. :(

    Looking at the gin posts I began to wonder...

    ..would soaking grated stem ginger in ginger wine give it a little more zip do you think?

    Ingredients
    30 elderflower heads
    6 pints (approx. 3 litres) of boiling water
    2lb (900g) caster sugar
    1 packet of citric acid (available from chemists)
    2 unwaxed oranges
    3 unwaxed lemons


    Method
    1. Gently rinse over the elderflowers to remove any dirt or little creatures.
    2. Pour the boiling water over the sugar in a very large mixing bowl. Stir well and leave to cool.
    3. Add the citric acid, the oranges and lemons sliced, and then the flowers.
    4. Leave in a cool place for 24 hours, stirring occasionally.
    5. Strain through some muslin and bottle.




    Add a splash to a G & T...yum!

    So do I Curry Queen, but I think you need some pleasure and so long as you don't overdo it you'll be fine. Anyway did a booze run 2 weeks ago with friends (took me 3 days to recover - from the journey not the drinking:D) so lots of very nice red wines in stock! Can't let them go to waste but only have 1 or 2 glasses and not every night.
