I made a cauli and potato bake yesterday which was really tasty, and enough for 3 meals for me, had some last night, same again tonight, and one portion in freezer. I put the details on https://forums.moneysavingexpert.com/discussion/3571159/vegan-store-cupboard-challenge/p42
I am vegetarian, not vegan, but many of my meals turn out to be vegan. Even more so now, as using sunflower oil a lot, rather than butter, to save what butter I have for important things, such as toast and on sandwiches, when nothing else will do.
Posted some other recipes on that thread for Scottish oatcakes and a lemon loaf, both using sunflower oil (other vegetable oils are fine too, just using what I had) rather than butter6 -
I use celeriac in things that require a lot of potato too, so I make massaman curry with half potato, half celeriac.

No mushrooms?!?😱 Poor you that they elicit that kind of reaction - food allergies are not a pleasant thing! I have an Auntie who has exactly the same reaction to them & always adjusts recipes accordingly.
I have a legume allergy (and am chronically anemic) - so actually going veggie would never happen 😒 much as I love the ethics of it!
Using a tin of soup as a sauce makes me think of my GMa - I remember her collecting Campb3ll's soup labels as they always had recipes on the back - such a great cheat for lazy day cooking!4 YEARS 10 MONTHS DEBT FREE!!! I only follow the full recipe at Christmas, the rest of the year its turkey or ham, whatever I have, I forget about chestnuts, and if I don't have any bacon that gets omitted as well. The secret is its LEEK AND - you use a lot of leeks, very little meat

Thanks suki1964, I certainly have a lot of leeks - half of one of those great big garden trugs - and that is after taking about 8 to each of several neighbours. I need to prep and freeze some too.
We had a jacket potato with leeks in cheese sauce last night. It was so sweet and delicious. I might use pork to add to a pie as I have some shoulder left from our Saturday Roast (apparently several of us cooked it on Saturday.
