Banana Bread
Ingredients
375g Self-raising flour
Pinch of Salt
225g Caster sugar
150g Melted butter
3 beaten Eggs
375g Peeled Banana (very ripe)
110g Dark chocolate (chopped)
150g Walnuts chopped (optional)
Method
Grease loaf tins
Preheat oven 180ᐤC/350ᐤF/Gas mark 4
Mix the flour, salt & sugar
Add the butter & eggs and stir
Roughly mash banana
Add chocolate, bananas and walnuts (optional)
Mix to thoroughly combine
Divide equally between prepared tins
Bake for 55 minutes, check after 40 minutes
Cool in the tin for 5 minutes, then turn out onto a cooling rack
Store in an airtight container or freeze either whole or sliced

I have picked the first asparagus of the year from our garden and we will be having it steamed with egg salad for our supper. We realised we were quite hungry about three this afternoon and had our lunch (brunch in my case) then so a light supper is all we need. I want to try and shift the few pounds I feel as though I am carrying. Eating a load of (supposedly Easter) chocolate early in April was the cause. I just need to face up to the fact that I don't do moderation where chocolate is concerned.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
OS Grocery Challenge in 2025 I am at £1286.68/£3000 or 42.89% of my annual spend so far
I also Reverse Meal Plan on that thread and grow much of our own premium price fruit and veg, joining in on the Grow your own thread

If you are shopping, helping out other family members, remember this is ALLOWED, so don't be feeling guilty or like you are breaking the rules. Sitting in the garden a safe distance , not sharing cups and glasses and the loo is perfectly acceptable and its great for your mental well being So stay for a natter whilst the weather is good and you can socially distance. You probably get closer to people in the supermarket after all8

I usually take full advantage of my veg box people around this time to buy English asparagus for as long as it lasts, but because of the huge problems they are currently having, their selection of veg on offer is extremely limited, and so far, no asparagus. ☹️

Lots more little spears of asparagus seem to have been encouraged by cutting the first lot, so we will get at least one more meal from ours this year. In the meantime I need to do something with leeks as DH cleared the bed and I have about 30 to process today - I think I will do 'cheesy leeks' (baked leeks in cheese sauce), possibly with jacket potato as I also have two pints of milk that were sell by 17th (bought by DH on 17th because that was what they had).
