Leeks with mushrooms in creme fraische is really good too. It's one of my favourite ways to use them.

@Suffolk_lass how about using the white part of the leeks for any recipe that calls for chopped onion? In our house that’s called “Long Onions”. (My DH doesn’t like the texture of leeks but he will tolerate them when used as Long Onions.). You can always fry up a load, divide into 1/2 cup portions and freeze for later.

Having received a veg box on Thursday (which I forgot I'd ordered), I have a lot of veg to use.
Along with the leftover chicken thighs which have been marinading for a day or two, I intend to do chicken stir-fry tonight. Lunch was salad with halloumi, the last of the cherry tomatoes, herbs from the garden ,half the lettuce and croutons from the stale remains of a loaf. Rather nice, if I say so myself.
Carrot cake for pud tonight (we now have a load of carrots, and it's not really soup weather).

Celeriac is nice raw in a coleslaw with some grated apple and grated cheese. Yum, wish I had some.

I am running dangerously low on fresh veg, but have plenty roasted, raw and chargrilled in the freezer. All I have left are a a few onions, carrots, potatoes, cabbage and a couple of apples. Really craving salad stuff, suppose the best I can do with that lot is a coleslaw which is better than nothing.
