@greent we have use up once a week, it goes on the meal plan and everything
to tackle all those little bits and pieces and clear out the fridge.
I made 2 banana and chocolate loaf cakes to use up some bananas which seemed to go brown instantly, I had to supplement it with banana from the freezer
The frozen banana is a container that lives in the freezer which we add bananas to that are too ripe for us to enjoy fresh. I freeze them peeled as often they can be used directly from frozen (smoothies or frozen deserts) or partially defrosted and mashed to add to cake.
Another quick way we try to reduce food waste and make life easier.

Yum - banana & choc cake is always good @Baileys_Babe
Smushy bananas (whether from frozen or fresh) are also good in flapjacksI've also been known to sneak a few slices in an apple and strawberry crumble (we always have way too many strawbs to keep up with just eating them as is, so a lot go in the freezer for later use/ jams)

@greent can my ds stay with you to help out on the strawberry glut. In normal circumstances, he normally eats 20+ fresh raw portions a day of fruit and vegetable. He likes a good variety but has gone off carrots in the last few years, which is a shame as they are cheap and plentiful.
He also enjoys cooked fruit and vegetables, so very useful if you have a glut.Fashion on a ration 2025 0/66 coupons spent

I decided to get mystery box number 1 (of about 5) out of the freezer and I thought it was leftover curry so made a quick veg curry to go with it - a bunch of leeks from the garden with a thin sliced carrot, half a courgette and then a small roasted butternut squash and some paste from a jar with a teaspoon of tomato paste and some lazy chilli. DH made a third of a batch of Jamie Oliver quick flatbreads (cheats naan breads) and it was yum. It turned out the box was also a vegetable curry and what looked like chicken when frozen was actually potato.
We also pigged out on a dessert - the last two chocolate brownies with a dollop of greek yogurt and a handful of frozen raspberries - that was just delicious!
I have a lamb shoulder out of the freezer to roast for this evening, with fridge and freezer veg and mint sauce or jelly

Loving the 'mystery' curry adventure SL
We had use it up omelette for brunch this morning - small courgette, several chestnut mushrooms, two grated carrots & some wild garlic used up! TBH it's more of a frittata but OH likes to call it a omlette!
Roast pork shoulder for dinner with roast root veg that also needs using up! The pork will last us for several meals as slices for sandwiches or cut up into bits for stir-fries.
Going to have a ponder over the enormous bag of curly kale that came the veg box - I forsee it making a way into every meal we eat for the next few days4 YEARS 10 MONTHS DEBT FREE!!! Kale can be made into kale chips. Really nice if you add spice and/or nutritional yeast if you have it.I am a vegan woman. My OH is a lovely omni guy8

We used one of the small shoulders of lamb from the freezer for our Easter dinner, roasted with baby potatoes and some steamed carrots and sweetheart cabbage. I think it was actually half of the piece I gave DS that they will be having for their roast dinner in his house. His housemates can be a bit hard work but they are basically good lads who need a bit of a nudge.
DS has been working for the last four days (he is a zero contracted hours keyworker) so they will be having theirs today - he will need a treat.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Very lazy yesterday - 2 fried eggs, oven chips and baked beans. I do wonder sometimes... "It's one of my favourite teas!" Oh lovely, so glad we cook from scratch at least 90% of the time!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

@Baileys_Babe Do you have a link for the banana and chocolate loaf recipe please? My OH loves bananas but never finishes them, and I’m really not a fan of banana bread myself!
I had defrosted some sausages for dinner last night but I really wasn’t in the mood for bangers and mash yet again, so did some rooting in the fridge and cupboard and ended up making Hairy Bikers’ Sausage and Bacon Casserole sans beans, served with mash- super yum!7
