The other day we had risotto with cut up hotdogs and peas thought it. It was nice. We didn't have any chicken in the freezer so thought this up. Tonight we had Quorn mince spaghetti which was nice. We are planning on doing toad in the hole for dinner on thursday as we are having a takeaway treat tomorrow night from an Italian place near us.7

Only a few bits of veg in the fridge,but I managed to turn out meals for two .Jacket potatoes,plus two extra cooked for something else another time! Coleslaw,grated carrot, small portion of mixed salad each,with HM French dressing.I also made soup out of all the peelings and lentils.The soup will do for tomorrow. Omelettes for tea with the last of the coleslaw ,I'm determined not to shop till the last minute. Freezer surfing tomorrow,and then perhaps I will have to consider phoning an order to the local greengrocer!8

took advantage of the good weather to use up as much out of the fridge as possible. Had two or three half used packs of sandwich meats, so done an old fashioned salad, slice of ham, slice of turkey, slice of beef, the remains of an iceberg , the best of the over ripe tomatoes ( the rest I will grill tomorrow ) cucumber, hard boiled egg and beetroot and fried up left over roasties and coleslaw , very tasty it was
Ive some Savoy cabbage lurking still so I shall make bubble and squeak tomorrow and serve that with the grilled tomatoes and duck legs from the freezer. Ive also got a bit of cauliflower and some spinach so might add chickpeas and make a veggie curry for Thursday
Egg and chips is my favourite dinner ever, even had it for my 50th Birthday dinner, and thats ear marked for Friday8 -

Banana Bread
Ingredients
375g Self-raising flour
Pinch of Salt
225g Caster sugar
150g Melted butter
3 beaten Eggs
375g Peeled Banana (very ripe)
110g Dark chocolate (chopped)
150g Walnuts chopped (optional)
Method
Grease loaf tins
Preheat oven 180ᐤC/350ᐤF/Gas mark 4
Mix the flour, salt & sugar
Add the butter & eggs and stir
Roughly mash banana
Add chocolate, bananas and walnuts (optional)
Mix to thoroughly combine
Divide equally between prepared tins
Bake for 55 minutes, check after 40 minutes
Cool in the tin for 5 minutes, then turn out onto a cooling rack
Store in an airtight container or freeze either whole or sliced

DH has just left to go shopping. This is slightly amazing. Normally he hates it but when DS offered he said, not, he would do it - it is quite civilised and he is enjoying having an hour away from me. I know it's not personal. Last night I had leftover chilli with a dollop of greek-style yogurt and he had the leftover veg curry with the rest of the chilli. I have a pork joint out and it is a big whole shoulder so half is going to be collected, along with a food parcel by DS who has had 6 shifts all month (key worker in a supported living facility where all the contracted hours staff are doing the shifts he normally has - as a musician/sound engineer a flexible hours contract was great - back then) so we are quietly topping him up until he gets his first UC payment in May. He will collect from the garden but we might have a little chat, obv maintaining our distance.
I meant to say that the recipe sounds lovely. Full of good stuff. I can't eat bananas without getting heartburn but the rest sounds lovelySave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

When we drop things off at my parents we often have a chat at least 3 metres apart.
We can incorporate drop off into our allowed exercise as we are able to walk there and are able to vary the routes, some through the woods, others completely on hard surfacesFashion on a ration 2025 0/66 coupons spent

Thanks Baileys_Babe, it is reassuring to know we are not the only ones. It does feel a bit naughty though. Son deferred his food collection to today, as he picked up a late notice shift from 4-9 yesterday. Our supper was salad with a jacket potato and some grated cheese. It was so nice and light.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
