Asparagus - what to make?!

    I tried asparagus for the first time today, and they are absolutely gorgeous. [Had to look here for how to cook - I went with baked in a little olive oil, salt and pepper]

    I made an asparagus, beetroot and rocket salad, which I had with a nice piece of battered cod for dinner.

    I really could eat it again.

    Asparagus is very nice if spinkled with grated parmesan and grilled.

    Asparagus is my very favourite, especially lovely British asparagus which puts it's foriegn counterparts in the shade:D It's really quite sad how excited I get when I spot the first crop in the shops:o Luckily DH loves it as much as me, because we have it so often during it's short season. I love it just steamed, or roasted or cold in salads or with olive oil and parmesan or......... you get the picture;)

    my oh bought a load of asparagus at the weekend and i'm struggling to know what on earth to do with it all!!!!!

    anyone got any easy ideas?????

  • Asparagus is delicious simply cooked and served with melted butter:)

    At least it is when it really fresh and in season in May. Don't know how good stuff flown in from the other side of the world in February will taste cooked that simply.

    Try it in a stir fry with chicken or salmon.

    Hi beckyandjack,

    I love asparagus just lightly steamed then tossed in garlic butter. It also makes great soup. There's an earlier thread with lots more ideas so I've added your thread to it to keep the suggestions together.

    My first post but cannot resist, i love Asparagus, a real favourite is lightly steamed and then dipped in soft bolied eggs.

    Or in a risotto with peas and protein such as salmon.

  • I made this recently without the beef and my OH was talking about it for days, even though the asparagus was floppy from freezing it. Yum yum

    Ingredients
    150g/5oz scotch beef fillet, sliced thinly
    20ml/¾fl oz sake
    20ml/¾fl oz soy sauce
    1 tsp grated fresh ginger
    ½ tsp soft brown sugar
    ½ garlic clove, finely chopped
    1 small red chilli, finely chopped
    110g/4oz asparagus, chopped into thin sticks (julienne)
    75g/3oz mangetout, chopped into thin sticks (julienne)
    2 tsp sesame oil
    salt and freshly ground black pepper
    2 tsp sesame seeds, to serve
    2 sprigs fresh coriander, to garnish


    Method
    1. Place the beef fillet, sake, soy sauce, ginger, sugar, garlic and chilli into a bowl and mix together well. Set aside and marinate for 30 minutes.
    2. Heat a wok until hot and add the beef mixture. Stir-fry for two minutes, until the meat is browned all over.
    3. Add the asparagus and mangetout and continue to stir-fry for a further 2-3 minutes, until the vegetables are just tender and the beef is cooked through.
    4. Add the sesame oil and season, to taste, with salt and freshly ground black pepper.
    5. To serve, spoon the stir fry onto two plates and sprinkle each with the sesame seeds and garnish with a sprig of coriander.
