Asparagus - what to make?!

I bought some asparagus from our local farmers market today, have found one recipe for it (asparagus and lemon risotto) but have a feeling I'm likely to have some left over. Any ideas what to do with it other than dipped in soft boiled egg and steamed with hollandaise?

    wrap a piece of ham around it, pour over a cheese sauce, top with bread crumbs - stick it in a moderate oven until cooked an golden :drool:

    Pour a few drops of olive oil over, slap on the barbecue for a few mins, turning once, and serve with either a little melted butter, or if you can be bothered, some hollandaise.

    Enjoy it with the sun, (if you have it), and a couple of cold beers - I find Grolsch goes will with any barbecue, and was cheap in Sainsburys yesterday :beer: .

    That's just reminded me I have a bunch in the fridge that I might use today. On the Sainsbury advert, Jamie O says just to drizzle on some olive oil and char-grill them instead of steaming, so I might give that a try for a change. Not sure what to have with them yet mind, maybe a tuna steak or something.

    Had a lovely piece of salmon last night, marinated in teryaki and pan fried, served on a heap of soba noodles tossed in a dressing made from soy sauce, peanut oil, freshly squeezed orange juice and lots of black pepper, with water cress on the side ... YUM!!!

    We got some lovely asparagus from our local farmers' market too yesterday. Just had it very simply steamed then served with a little salt sprinkled over and butter. Rick Stein suggests this with olive oil and parmesan shavings instead. Didn't have any parmesan shavings though..........

    I like asparagus roasted / griddled and then "dressed" with balsamic vinegar & EV olive oil with a few parmesan shavings on top.
    My friend Sam does it in a tarragon/lemon butter which is fairly scrummy too.

    A good use for the ends of asparagus you trim before cooking.
    400ml milk
    2 leeks finely sliced
    2 floury potatoes
    200g of asparagus (mainly ends and trimmings)
    500ml water

    simmer the leeks in the milk for 5 mins, add the asparagus and simmer for a further 5 mins then add the potatoes a pinch of salt (if you like salt) stir and then add the water. simmer for approx 30 mins.
    blend seive to remove any really woody bits of asparagus and serve (maybe with a swish of cream or olive oil)
    Made this tonight smelt lovely will let you know how it tastes after lunch tomorrow.
