Asparagus risotto is truly delicious and it wastes very little as you can chop and use the asparagus almost all the way to the bottom of the stalks.

Hi all,
I got my first delivery this am from the 'local food company' - very nice too I must say, very varied...
Anyhoo, my question is that they have sent me about 8 or so sticks of asparagus and I don't know what to use them for! I know how to cook it (boiling etc) but wondered if anyone has any ideas of how to get the best out of it? I am trying to persuade my OH that the veg/fruit box is a good idea so all meals have to be as spot on and appealing as poss this week!!! Any ideas would be greatly welcomed!!

I love it either barbequed or slightly boiled then drizzle over garlic butter and finish with fresh parmesan shavings.
Trust me, it sounds simple but its lovely !!!!!!!!

Lightly steamed or boiled and served around a buttery mound of mash with a poached or fried egg on top - dip the spears in the runny yolk - yummy!
The Delia snap test is the best way to decide if anything should be discarded - before cooking hold the lower end of the stem hoizontally in both hands and bend it lightly. If it snaps then use the lower portion for stock or to flavour soup. You shouldn't lose more than an inch if the spears are young and fresh.0 -

Steam it and serve with homemade hollandaise. Eat it together, with your fingers, from one plate, explaining that it's an aphrodisiac. He'll soon want to keep the veg box then0
