    Hubby and I have just spent the week in Devon and Somerset. Visiting family as well as having a few days in B&B and Travelodge.
    Whilst away bought a very large cauliflower for 89p which we will enjoy over the next few day. Also bought some Bramley apples for £1. Today I made two crumbles - one raspberry and apple (picked raspberries from the garden) the other apple and blueberry. I have also made some apple and blueberry for my porridge this week. Yum! Yum! The blueberries came from the garden/freezer. Used up two eating apples that we had left from the holiday.

    Yes, you are right, I saw you post about your trip earlier in the thread. I try to use the market as much as I can as I know we are so lucky to have it. Helps me to keep my waste down too as I am able to buy just what I need - and the lovely man on the fruit and veg stall I use always slips a banana under the pram for the baby and chops up a bit of fruit for her to eat on our walk back. This week it was tangerine which ran all down her arms and made a right mess but she loved it so I don't mind!

    Homemade lamb curry for us here tonight and as the budget doesn't stretch to a Saturday night takeaway anymore, I used another old onion to make my own bhajis as I had plenty of chickpea flour in. Need to perfect the spices but they were just as good as anything j would buy and cost me pennies to make. I think about 4 portions of curry left over too. Lamb was a bit of an extravagance but definitely worth it - it was delicious!

    Will make a cheese and onion pie tomorrow with the last onion, and will prepare some (bendy!) celery soup for lunches for the week - one of mine & E's favourite lunches is homemade soup with cheese on toast - and then my fridge is fairly empty and we will need to start going through the freezer stocks. This thread has really focused my mind so much already and I haven't thrown anything away since I found it - you are all fab!

    Hi MrsD18 Im in a similar to you. I have one week left of paid maternity leave and then will be dropping to zero pay so really need to save money. My eldest is 2 first week of November and my youngest is 8 months. When I do go back to work I will only be doing a third of the hours I was so our income will really be taking a hit.
    My eldest loves soup for lunch too. Our favourite at the moment is carrot and lentil. He loves having it with French toast with and little cheese grated on top.
    Gem-gem all that compote sounds delicious. I need to get some fruit out the freezer so it might make some pear and blueberry compote for porridge in the week.

    Isn't it great when you get to use the odds and ends up and seeing what other folk make out of very little does inspire you doesn't it

    Well as usual I shall be going to my youngest DDs for dinner late this afternoon, so I normally have a sort of brunch out of bits and pieces in the fridge

    Today I had half a bowl of left over steamed potatoes from last night so I sliced up about half a dozen and fried them with some of the 'cooking' bacon from the fridge. Its really the odd shapes from a packet, and I cut all of the fat off and dice it up and fry it as well (the cut off fat I fry afterwards and render down and pour into a small dish and when set put in the fridge to use if I need some fat for an omelette) nothing gets wasted if I can use it up. Any left over fried, diced up bacon can go into tomorrows omelette.Back to today's brunch half a tin of baked beans and an egg finishes it off

    So tomorrow's lunch will be an omelette with cooked diced crispy bacn left over from todays brunch :)

    Tomorrow nights dinner will be the last of the pot of steamed potatoes that I cooked last night and the left over piece of chilli chicken from last night (I cooked two but only ate one ) plus a large salad with lettuce ,tomatoes, cucumber, beetroot, grated cheese and some sweet chilli sauce to dress the salad with . Most of my meals are a sort of carry over from the previous day as I usually cook a bit extra for the following day. Saves me a lot of time and effort and its as easy to cook one meal as have enough left over bits for two :)The left over half of the beans will probably go on a jacket spud for lunch on Tuesday as I am out at Pub Quiz on Tuesday nights so don't need to cook.

    Looking at my store I see I too have a few red onions unused as yet so I may make some cheese and onion pasties to go in the freezer tomorrow .Pastry takes five minutes to knock up, and I will probably chuck in a diced carrot thats looking a bit clapped out at the bottom of my veg box as well. Streetching food to its full potential is a great way to make the pennies streetch a bit.Thanks for making me remember to use up some of my onions MrsD18 I can easily make around four cheese,onion (with a little carrot chucked in )pasties which will freeze and do for lunches or with salad for a main dinner. basically making something out of very little :):) My late Mum spent years during and after WW2 doing this with rationing.

    I have a half a jar of smooth peanut butter in the cupboard, and I will have to have a shufti and see if I can find a recipe to make some sort of cereal bars or tray bakes with it to use it up.

    JackieO I make peanut butter bars which are very tasty. They are a bit drier than a flapjack but just as tasty.
    Melt together 4 tbsp peanut butter and 4 tbsp honey. Stir in 170g oats and 50g sultanas. Press into a tin and bake for 15 minutes at gas 5/ 190°. Cut into bars and enjoy.

    Just back from a few days away in the van and have some LO boiled potatoes and half a tin of beans so am going to use them up in a corned beef hash.

    Haven't made this for a long time and really looking forward to it.

    How was it? I hope you enjoyed it as much as we did ours on Sunday! :D

    For dinner last night we had a liver, bacon & onion casserole with mash and green beans. Another low-cost, tasty and filling meal. The liver and bacon (bits from a value cooking pack) came from the freezer, along with 2 chicken thighs that I cooked at the same time to fill up the oven. I've used these to make coronation chicken for tonight's salad - lettuce, tomatoes, orange pepper, onion, h/b egg, plus some lo mixed salad beans. For afters we're having Greek style yogurt with ys plums that are now ripe enough to eat. Works out at about 35p per portion (including the fruit). I find the large pots of yogurt are a better value option than the branded "corners" and it helps towards the 5-a day intake if you add your own fruit. Win-win. :):)

    No shopping needed so far this week so, as per plan, my purse remains firmly shut. :D The weather here in Yorkshire has turned much cooler - bright, sunny but oh so cold with ground frost at night - so it's no hardship to be indoors just "pottering". ;)

    Really enjoyed the corned beef hash. There wasn't as much as we'd normally have so I fried an egg and put that on top - it was even better than usual. Finished off with some fruit & Skyr.

    Had to do a bit of shopping today and bought some pigs liver & pork mince. Going to be making some faggots tomorrow. That should be enough for 2 meals. Another meal we've not had for quite a long time.

    I'm also planning on making some red onion chutney and some beetroot chutney. Will be using some of the cheap beetroot I got from Aldi a few weeks ago when they were on Super 6 - was really surprised with the long use by dates on them - Feb 19.
