Livingproof, I would assume you could just substitute whenever a recipe calls for sun dried tomatoes. Other than that I've got no idea, LOL!

What amazed me today was that the three plants I abandoned due to lack of space were still growing strongly and there were literally hundreds of ripe yellow plum tomatoes and I have picked several pounds which I'll have to dehydrate due to lack of freezer space. Some suggestions for their use are to grind into a powder to add to soups, etc. or I could slice, dry and subsequently re-hydrate but am unsure what I could use them for. I was not prepared for such a glut, and heaven knows, I already have tons of red ones frozen and dried.

Do any of you have any good ideas please?

You could have a go at making your own sunblush tomatoes stored in oil with some herbs to infuse...what about swapsies with some other allotment peeps? You could make tomato sauce and store it in steralized jars, should be ok as long as you jar it hot.

  • Due to a leaking carton of milk I finally had to clean my fridge :o so got to check dates on my DSis’s food supply:rotfl:
I made sure my DSis actually cooked her breaded chicken goujons which she had with oven chips :T
Had no idea what to cook for DH & me  but at 7:15 p.m. I remembered the jar of pesto in the cupboard & we always have plenty of pasta :rotfl: So pesto pasta with the last of the grated Parmesan - dinner ready within 20 minutes - & soooo delicious  Added bonus, DSis doesn’t like it :rotfl:
My musty mushrooms weren’t wasted as they went in the wormery :rotfl: but nothing else wasted :T

Cheers, that's reminded me I have some mushrooms in the fridge which I shall use up today in an omelette before they get past their best, probably for breakfast, as I am at DDs this week and next as my DGS are home from school for half term so lunch will be at their house this week and next No cooking tonight as its quiz night at the pub tomorrow night I shall dig some fish out of the freezer as I have quite a bit to use up in there.

I think everyone on my allotment site has had record crops of tomatoes this year, and like me, they wouldn't care if they didn't see another one until next summer. I think it is the yellow colour that is putting me off a little, and they are so juicy they will take a couple of days to dry. That is giving me a little time to think how I can use them in the future. I will look up tomato tarts, that might be attractive with both red and yellow used. Next year I will be more organised (I say that every year!)

  • Pork medallions in a mushroom Marsala sauce with boiled potatoes & green beans - absolutely scrumptious  & all eaten.

Have just made a vegetable soup - used up DSis’s drooping lettuce, 2 past their best green peppers which had turned orange :rotfl:, a few baby potatoes, a shallot, some cherry tomatoes, a vegetable stock cube & the last chunk of Stilton. Have had a little taste & seems to be OK - will zizz tomorrow & make some croutons - tomorrow’s lunch sorted & nothing binned:T

The hm vegetable soup was actually our dinner tonight - DH & I. Disaster with the 1st lot of croutons as I burnt them :o Put out for the birds :) The 2nd lot from the freezer were cooked to perfection :D & for a thrown together soup it was rather tasty :T DSis had a pulled pork slice & chips. Enough soup left to have a small snack tomorrow.
