  • Going to cook up and have lots of chicken drumsticks with nandos sauces. Some bread and butter. Bit of a random dinner but will use up the chicken and it's fairly quick and easy to make, so all good for Fri night.

    I had bread and cheese on Wednesday due to tiredness although I'd planned to cook and then yesterday made this recipe Peanut butter rainbow rice recipe | BBC Good Food. I subbed in the Cauldron tofu that's currently on offer in S*inby's for the chicken and used frozen instead of tinned sweetcorn. The sauce is very good but I think it would be even better loosened with lime or lemon juice and done as a stir fry with fresh tofu from the Korean grocer and will try that later in the month when the budget allows.
    Had another portion of the above this evening without the rice and followed by some fresh pineapple and then a digestive biccie and some mousetrap cheese with coffee.

    Cooked up some pasta with a jar of sauce that waa open in the fridge,  some sliced fried mushrooms with a couple of sliced home grown toms also fried and finished off in balsamic. Added the last of the courgette grated although in hindsight it needed cooking a bit longer. Also sliced and chucked in some olives that had been in the fridge for a bit.

    Two portions left in the fridge. 

    A good old use it up dinner for sure.

    Corned beef crust?
    Basically a tin of corned beef, sliced and pressed into a quiche dish, baked for 10 minutes before adding the egg/cheese mixture and anything else you want to add, great Keto lunch 👍

    steak and chips. steak from the 3 for £8 deal at Iceland. It's quite small but we don't mind splitting it and obv's works out quite cheap. I also got mince and... gammon which I hope to ''sunday lunch'' tomorrow with lots of leftovers for one day this week as I'm working a 5 day week instead of 4. haha. when i say this i mean im working 7.30-6 5 days instead of 4....Zzzzzz luckily i've got the week after off. phewww.

    There were four large portions of yesterday's Thai green curry left over, which I have frozen. Tonight I am making mushroom stroganoff, and have made a black cherry and chocolate sponge for this week's puds.

    I had a lot of windfall Bramleys to process, but they were quite bruised. By the time I had peeled and cored them, and discarded all the badly damaged bits there wasn't as much left as I had hoped, but there was enough to make two loaf tins of Dorset apple cake (currently baking) which will get sliced and frozen for Mister CJ's coffee breaks  :)

    Courgette and butternut squash curry today (Curry Secret recipe book). And a naan. 

    Son2 made himself linguine with olive oil, herbs, garlic and chilli.
