I’m making Moroccan spiced chicken paillard tonight, served with a little couscous. Ice cream for pud.

SiL’s birthday today, and we’re hosting dinner.

They don’t eat meat, so it’s scallops, crab claws, lobster, aioli, salads, Foccacia, chocolate soufflé and lots of wine 🥳

    Hot dogs!

(wondering whether anyone local has any proper cucumber relish as that's something I really miss for dogs)

@Islandmaid do you still have the recipe for a lemony pasta sauce you used to make please? It was on your blog at one time, with spaghetti. I've lost the recipe and remembered how much I enjoyed it.

Cooked up what was left in the fridge - chicken, onion, a leek, grated apple plus lots of sage and some grated cheese. Made it into a big pasty with puff pastry. It was a bit like a fitchet pie. Chopped it into 3 for us with some broccoli.

Pudding was yoghurt and tinned peaches.

Thanks for the kind comments about my lack of imagination yesterday.

Today I'm firing on at least three cylinders and made this recipe Coconut cashew & butternut squash curry recipe | BBC Good Food which I ate with basmati rice, green beans, carrots and gherkins on the side followed by a plain digestive and two coffees.

Here is the finished article in my recently acquired charity shop bargain stockpot.

Now I think of it I also bought the spatula from a different charity shop recently too.

All the little bits are the whizzed up cashew nuts which if I'm honest I think I won't include if I repeat the recipe as they add 440 kcals overall to the dish but not much in the way of flavour and it would probably taste better if I substituted them with brown lentils and a really good curry paste with a good slosh of fresh lime juice at the end but it still tasted good for a first go at a recipe IYKWIM.

@kerri_gt was the the prawn pasta? If so, v easy, finely diced onion and garlic fried off in olive oil or butter till soft, I use a good glug of white wine and cook down (can be missed out) then add around 200- 250 ml chicken stock, reduce again, add a good squidge of lemon juice, season to taste, add prawns, add chopped coriander add cooked spaghetti stir through - stuff your face 😝

We’re off to collect our 2 yo grandson from the mainland this afternoon, so mummy and daddy can have a weekend ‘off’, we’re taking him out for a Chinese, his favourite food 😂 wish us luck 😵‍💫

@Islandmaid that's the one, thanks so much 😁

Have a great time with the little one, love it when they have 'grown up' tastes so young.

Last night was salmon, pea and broccoli risotto..not from scratch I'm afraid but was in a rush as had gym class. It's a freezer bag one from Iceland. I added some chestnut mushrooms I bagged from Olio, and some sliced grilled courgette too.

Yum risotto!!!  I wonder if I could convince the OH to make a chicken liver one - my favourite.  Maybe if I put on my pouty-est face.
