    tonight chicken fajitas - with romaine lettuce leaves instead of wraps - lo carb style

    BBQ chicken wings with coleslaw. I cooked them yesterday luckily and just reheated in the microwave as our oven broke last night....3 one to 'trip the electric' and then break in 4 years. Still under warranty but have to wait until next Tuesday for anyone to come out to fix it so having to plan meals using only the hob and grill!

    Sunday was stir-fry using up various veg from the fridge drawer to accompany smoked paprika and garlic granule celeriac chips done in the oven, Monday was spinach, blue cheese and walnut pizza on a wholemeal spelt crust.
    Both very nice and the celeriac will go into my regular rotation as long as the season lasts for being both easy and delicious. I used rapeseed oil to coat it which gives it a lovely colour but forgot to take a photo before I scoffed the lot so can't show it off here.

    It certainly warrants it! Although, I suppose it just means that there's more cheese for me :):smile:

    Tonight I'm making a toad in the hole, which I'll serve with mashed potato, cabbage and broccoli.

    I made crispy skin salmon with king prawns in butter, samphire and garlic served with halloumi fries, kale, courgette and leek stir fried with lemon.

    More meatballs (basically because they're quick,  easy and at the front of the freezer) with some LO potatoes from last night lightly roasted and the last of the LO veg from Sunday's roast.
