  • I did a Thai green curry last night, with rice. Tonight I'm doing a joint of pork, with roast potatoes, sweet potato mash, carrots, honey roast parsnips and broccoli, with a mustard gravy.

    Roast chicken with all the trimmings for us tonight (including sage and onion stuffing, and home made Yorkshire puds).  Pineapple sponge and custard for dessert, if there’s room.

  • I'm currently making tonight's tea - a pasta bolognaise. I've fried off some onion, celery, carrots and red pepper, then when soft added in a carton of passata, then a bit of water with one beef stock cube and one vegetable stock cube. Once that was cooked, I blended that all together (hidden veggies work well in this house for the fussy eaters - bane of my life!). In a separate pan I fried off some bacon left over from the weekend, along with a yellow sticker pack of lean beef mince. Once that was cooked I mixed it into my blended sauce, and added a tin of cherry tomatoes. Yum! The usual salt, pepper, garlic and dried mixed herbs went into this, along with a pinch of sugar and a handful of chopped fresh basil which I grow on my kitchen windowsill. 

    I'd love to bake this with the pasta with cheese on top, but I'm in a house of cheese-haters more's the pity!

    Last night was stir fry with noodles
    Tonight- OH needed to pop to M and S for a gift voucher earlier today. He brought us back one of those Dine in deals. The paella, chips and apple crumbles I think they are.

    Had pork roast dinner yesterday and made a rhubarb sponge pudding for afters with cream.
    Tonight I'm having lamb hotpot with kale and some of the leftover pudding form yesterday. Love rhubarb season! have some growing in the garden but it is just little sprouty things so far.

    We're having chicken and vegetable pie tonight, using some of the leftover chicken from yesterday's roast. Will be served with steamed greens, the last of the ones from the garden (tenderstem broccoli - not too much of the heads left but the leaves are really tasty too!)

    I've stripped the carcass and made a pressure cooker full of lovely chicken stock for soups this week too.

    Pasta tonight, last of the roast pepper stir in sauce, cooked and chopped some ikea meatballs,  used up an end of goats cheese thats been lurking in the fridge for yonks, and used up a portion of the chopped stuffed roast pepper from the pub roast the other week.
    Another portion left over too.

    Went through the cupboards at the weekend and pulled out all the stuff that is soon to go out of date, one item was a carbonara mix so we're having that tonight with the last of the spaghetti, some bacon from the freezer and the last of the mushrooms hiding in the fridge.  Will make a nice salad to go alongside so I can make sure DH actually gets some greens in him today 😉
