Had penultimate portion of sour cream and onion tart with roast sweet potatoes and moonblush tomatoes. Dried apricots for snacky pudding.1

Steak and mushroom pie, mashed potatoes, peas, broccoli. I had nut roast with the veg and gravy.1

I’m using the last of the roast pork from Tuesday - I have minced it up and added it to chopped sautéed shallots, carrot, aubergine, mushrooms, ginger, chilli and garlic then flavoured it with miso paste and mirin. I’ll then top it with creamy mashed potato mixed with mashed carrot and chopped steamed spinach. I’ve adapted it from a recipe I found on the Australian Women’s Weekly site, I always find nice ideas there.1

Tonight I am doing a chicken version of last night where I have coated the chicken in pork scratchings and it is just like KFC. Had it on a low carb barm cake with salad and felt like such a treat.1

I had two aubergines lurking in the fridge from my veg box delivery, so I made melanzane parmigiana from scratch. I used the BBC Good Food recipe, and whilst delicious, took so long to put together that I lost the will to live. Started griddling aubergine slices at 3pm, finally put the finished dish in the oven at 5:10pm 😳
The recipe did make a large baking dish full - of which there is about a quarter left, and a smaller one for the freezer, so suppose it was time well spent (we had it with broccoli and garlic bread).Books read 2023 - 49/755 -
I made a quick 12 minute dinner of spaghetti with a jar of chilli pasta sauce, prawns and frozen peas with garlic bread. Really couldn't be bothered tonight.4

Spaghetti with HM pesto tonight (made on a whim, never made before, don't like jar pesto...this one was lovely, even if i did forget the garlic 🤦♀️ remedied for left over pesto).
Also made a huge pot of veggie chilli which i am always convinced will last ages and never does.
Finally to totally finish off the kitchen bomb site, made an old fashioned bread pudding. Never made one before and the spice qtys between recipes vary wildly. Anyway, it seems to be delicious still warm. Hope its nice tomorrow too.
Fed up with today's announcement, can go to the gym or the shops with 50 people i don't know but can't sit inside with one friend for coffee...sitting on a park bench in the cold and getting piles / hypothermia is fine though 🤷♀️Feb 2015 NSD Challenge 8/12JAN NSD 11/16

When I said I was using the last of the roast pork to make those pot pies yesterday, I was lying. There was a bit more meat than I anticipated so I kept a large handful of the minced pork back, and have added loads of chopped veg to it (aubergine, onion, mushroom, tomato, spinach) along with curry spices and a tin of coconut milk. I have no idea if this sort of curry even has a name (Random Rogan??), but it smells gorgeous! Will be served with home made onion bhajis, poppadoms and just a little bit of rice.4
