Sausage casserole (using Richmond veggie sausages - they're the best) with carrots and peas and cheesy potato croquettes.

Had Delia's sour cream and onion tart with Nigella's moonblush tomatoes, gherkins, broad beans and sweetcorn. If I can find the space for pudding will have some papaya with lime or lemon juice later on.3

I have just had the best vegetarian sausage conversation with my vege son (via WhatsApp) I am pleasantly surprised at how nice the richmond sausages are. I was always a fan of the plain Linda McCartney ones until someone told me about the Richmond ones and now they're a firm favourite here! OH is a meat eater and he says they taste just like normal Richmond onesJIL said:

Tonight I grilled a Lidl spicy bean burger alongside chopped toms with butterbeans, sweet potato mash and spinach. DH had the same but two Quorn burgers instead of a bean burger. Afterwards we had HM lime coconut cake.1
