    We had chilli con carne and fajitas ( chicken for meat eaters, halloumi for me) in baskets that I made with smaller tortillas wraps and squirted with fry lite and baked in muffin cases, I was experimenting and it worked well.
    We went  out for a walk before dinner and I popped into the coop to buy some muffins for breakfast, reduced section was full of goodies, I got some mince pies, iced fingers, flapjacks, apples, strawberries and some nice bread. So afters were sorted.

    Tonight tonight I’m making cod fillets pan fried in butter and served with curried cauliflower purée and home made onion bhajis.  I’ve made a Key Lime pie for puds this week.

    Sounds lovely CJ.
    I have made my usual, chicken, roast potatoes, root mash, yorkshire pudding,  stuffing, cabbage and peas, I'm having a slice of nut roast.
    While I prepped the veg I made soup for lunches. 
    Just off out for a walk and we will eat when we get back.
  • I made chicken parmigiana with courgettes, broccoli and cauliflower. Had some HM snickers cake fro pudding with cream. DH made vegan cottage pie out of some lentil/butternut squash curry he discovered in the freezer. We are really trying to nail a freezer amnesty before Christmas. We have two freezers and are finding all sorts of bizarre items at the farthest reaches. Today has consisted of him bringing several items to me to do the prod and sniff test.
  • We were supposed to have HM chicken pie tonight but I sat down on the sofa by mistake and got sucked in by the F1, so instead we had all the leftovers I could find in the fridge - one portion pasta bolognese, half a dish of melanzane parmigiana, one loaf of garlic bread - and quickly cooked up a packet of spinach & ricotta tortellini, added pesto and broccoli, voila, buffet dinner in 15 minutes 😁

    We need one of those too, i must stay away from food shops unless it's essentials. Normally i have our xmas dinner bought and in the freezer by now, i could barely fit a sprout atm. That said i do have a joint of beef in there i know i need to cook and should have before now, maybe this will be this week's target.

  • Made a fridge clearout soup for dinner with onion, garlic, potatoes, yellow pepper, parsnip, carrots, grated ginger and ground cumin. Added a stock cube, water and salt and flung it all into the slow cooker. A scant hour later, gourmet heaven; plus an additional three portions for the next few days. 
    Eaten with freshly grated parmesan and brown toast.

    Tonight we are having a Portuguese beef casserole - cubed beef, onions, red peppers, mushrooms, tomatoes, paprika, garlic and red wine - which is currently simmering away gently in the slow cooker.
  • We’re having the HM chicken pie we were meant to have last night, with broccoli, cauli, HM yorkies and gravy.
