I have ordered massive fish & lobster pack from local fish company that normally delivers to a posh hotel near by. They now sell to public.
Cannot wait for this. As we cannot go out I am going to treat us to lobster dinner at home with wine and the lot when it arrives!
But anyway, as it might be coming soon, need to eat more out of the freezer to make space.
For lunch we will have Indian starters selection that is in the freezer (onion bhajis&samosas) with salad.
For dinner we'll have steak ramen.5 -

Tonight will be braised coconut and chilli beef with brown rice, hopefully enough left to freeze for another day 😊Note to self - STOP SPENDING MONEY !!

Potato and leek soup for lunch.
Fish and chips for dinner. Consisting of oven chips and we are going to breadcrumb cod fillets. Not sure on the veg front as we have basically run out of fresh and to be honest the freezer and tinned options aren't great either! Just holding off going shopping for obvious reasons. OH will probably have beans but I am not keen on beans with fish. Have just found a fresh tomato in the fridge, this will be suitable for me, i think.4 -
Lunch today was a bacon, brie and cranberry toasted panini each, and supper is a very simple bangers and mash with peas and onion gravy.
I had a few pears that were starting to go over (the way they do, the moment you take your eyes off them!) so have turned them into a pudding: I peeled, cored and poached the pears in some apple juice and a dash of cinnamon, and thickened it with arrowroot. I defrosted a chunk of leftover shortcrust pastry, and used it to line a flan dish then topped this with some frangipane (beaten together butter, sugar, ground almonds and an egg) and baked it for half an hour then spread the pear mixture on the top. For a random/use up oddments dessert, it was blummin lovely!5 -

Evening everyone, is it Saturday? I've been convinced all day that it is.
Somewhat odd dinner tonight. I came across a recipe on Nigella's site, called "Mince Roll". It looked interesting, but I don't eat meat so I set about adapting it. Instead of the minced beef filling, I scouted the fridge and settled on leeks, mushrooms and some of the leftover chickpeas that needed using up. I thinly sliced and steamed the leeks and added them, along with the chickpeas, to the mushrooms which I'd fried gently in oil and butter. Stirred in some flour and cooked for a few minutes before splashing in a little milk. Once that was incorporated, I grated in a little cheese. So this went inside a rectangle of dough, which was a really unusual method: Rub in 30g butter to 280 grams self-raising flour, about a quarter tsp salt and a good pinch of sugar (not sure why this is there or whether it really needs to be...). Stir in 50g grated cheddar then whisk a medium egg into 125ml milk and use this to mix to a soft dough. (You won't need all the liquid, so use the rest to glaze before baking.) Now, you're supposed to roll it up like a swiss roll, however, I added the filling when it was still hot and, rather predictably, the dough couldn't really cope with that and the finished article was more of a "splat" than a roll... Bake for 40-45 minutes. It was much nicer than I was expecting and the pastry finished up a bit like a lighter version of a suet pastry. To be honest, it would be much better suited as a winter meal but I enjoyed it.Avoiding plastic, palm oil, UPF and Nestlé8 -

Homemade corned beef and onion,baked beans and mash pie. Similar to a shepherds/cottage pie.
I make about 3 of these at a time for the freezer.

Lunch today will be home made soup with a home made roll and some fresh fruit and supper this evening will be pasta with home made wild garlic pesto and grated cheese followed by home made prune fool and a cup of black coffee.4

I ended up with a late lunch of a kinda of tuna melt on toast adapted from a recipe I saw on FB. I used a small tin of jalapeno infused tuna that's been kicking about the cupboard, spoon of may, chopped spring onion, salt & pepper and a little bit of Dijon mustard. Put that on bread that had been grilled on one side - put the topping on the ungrilled side (I don't like my toastie bread double grilled) and then covered with cheese and grilled. Was quite nice, have the same again today and then only 2 more tins of that tuna left (OH used to take it to work in his sarnies which is why we have it )
Had that with some cucumber than snaffled some cheese tuc biscuits late in the afternoon and ruined thoughts of dinner.Feb 2015 NSD Challenge 8/12JAN NSD 11/16
