Yesterday's chicken casserole stretched further than I thought so the remainder is in the fridge to be eaten on Sunday with roast potatoes and a green veg. Today it will be salmon, baked in the oven with some sweet chilli sauce, plus roasted courgette, red onion and peppers, followed by the cut up fresh pineapple from Monday.
Lunch will be some grilled tomatoes and mushrooms.

So we had scrambled egg, hashbrowns, beans and bacon for dinner.
I also made a couple of quiches and a couple of loaf cakes to freeze. 42 eggs left. They are lovely eggs, and very colourful, blue, brown and white shells.
fortunately I have milk delivery and somehow my one off order of eggs is on repeat since I did it, but given I cannot get any in the normal shop I didn’t stop them!
They are more expensive, but nicer, and the milkman lost business from hotels&restaurants, so every little business helps him.
Yesterday for tea we had cottage pie which went down a treat, and today we’ll have a goulash&potato soup for lunch and chicken stir fry for tea.

JIL - Eggcellent purchase 🤣🤣DH is craving KFC so will fake up some chicken breasts with jacket potatoes and a large green salad, as the only salad Sainsbo had were the giant bags of mixed salad
i made cookies yesterday as I cleared out my baking stash and found 3 bags of desiccated coconut, so coconut and raisin cookies where shared with the neighbours, might make a coconut and lime traybake today.
also going to make the chorizo and bean soup Nigel Slater made on Daily Kitchen yesterday, perfect use up of the bits and bobs I have in the fridge, and will be for work lunches 👍Note to self - STOP SPENDING MONEY !!

I thought that Nigel’s chorizo and bean soup on yesterday’s DK looked lovely.
JIL, you can freeze eggs if you’re overwhelmed by how many you have. Lightly beat them in batches of two or three eggs and freeze them in bags.
Tonight we will be finishing up yesterday's lamb biriyani which was really tasty, and there is the last of the trifle for pud.5 -

do you have any neighbours you could share overs with? Perhaps in trade for something else. Oddly i haven't seen / had any egg shortage here, we have quite a lot of supermarkets and small shops plus farms about and we don't use tons of eggs ourselves so perhaps i just haven't noticed. Saying that, they keep for ages anyway so could've been worse mistakes.

I will take some eggs round to my parents and inlaws, when I take their shopping later. Husband had scrambled eggs for breakfast. I will make sure they are used.
It was lovely to see that the farm was giving out eggs to NHS workers. A half dozen box, two brown, two white and two blue. Or anyone could buy a special box for £1 and the money was donated.
Dinner tonight is seafood pasta.
A jar of chilli pasta sauce, a bag of defrosted seafood, cooked spaghetti. Easy and quick.4 -
Much colder here today and I had some stew I froze because we didn’t fancy it when it was nice and warm, so we are having that with some dumplings.Well Behaved women seldom make history

We had jd burgers (jack daniels) beautiful from butcher with, chips, cheesy chilli bites, onion rings chips and salad.
Tomorrow a break from Sunday roast stew, tatties, dumplings and veg. With bread and butter if wanted.6 -
Sweet potato and cannellini bean stew for lunch with the last of the home made bread rolls and supper tonight will be the other half of yesterdays shepherds pie with carrots, cabbage and gravy followed by the last of the crumble and some home made yoghurt.6
