We didnt have the jacket potatoes yesterday and had baby new potatoes instead.
So tonight we will have the jacket potatoes with salad, coleslaw., prawns and smoked salmon.0 -

Been trying a new healthy eating thing this week, so lunch yesterday was sausage and pasta bake (with hidden veggies - no cheese for me, but DH and DD had some on theirs - extra batches in freezer). Dinner was Chicken and Leek filo parcels with a side salad.
For tonight, I have put 'Slow Cooker Asian chicken' in the slow cooker. Will have with riceShould be one portion left over to freeze for another day.

Nothing CBA about jacket and tuna! You still have to cook the potatoes! We often have that but usually as a lunch rather than dinner.

What recipe do you use for your SC Asian chicken? I love SC dinners!
Tonight's dinner is a corned beef hash to use up the rest of a can of corned beef opened at the weekend for sandwiches.

It's a recipe from a new programme I'm trying at the moment:
500g chicken breast
1/2 cup brown onion, diced (50g)
1/3 cup tamari (gluten free soy sauce (80mls - though I used normal soy sauce as that is what I had in the cupboard)
1/3 cup honey (80mls)
1/2 cup water (120mls)
2 cloves garlic, minced
1 tsp fresh ginger, minced
4 tsp lime juice (20 mls - I just squeezed one lime)
Place chicken in bottom of slow cooker. Top with diced onion.
Mix the other ingredients together and pour over the chicken and onion.
Set to low and cook for 6-7 hours or until the meat is tender.
Remove chicken breasts from cooker and shred with two forks. Set aside.
Prepare rice. (160gms or 1 cup)
Pour sauce from slow cooker into a saucepan and bring to a gentle boil. Add 1 tbsp flour, mix and simmer for a few minutes until thickened. Add the shredded chicken to the sauce and stir to combine.
Serve with rice. Tope with a sprinkle of sesame seeds if you want, and some sliced spring onion.
This apparently serves 5, so adjust portions/measurements if you are doing for less or dividing up.
Please bear in mind that this is deliberately low cal, so if you are not trying to lose weight, you can easily stand to increase portion size.

I'm actually doing Slimming World, although at target so not actually losing weight just maintaining it as much as possible. This recipe would work for me with a bit of tweaking.
