Our leftover lamb just seems to keep going this week - the shepherd's pie I made (padded out with all sorts of veg, green lentils etc) lasted for more meals than I expected, and I have had to shoehorn a couple of portions into an already-full freezer.
There's still some leftover shredded lamb which will go into a pilaf for tonight and probably tomorrow. And probably enough for my work lunch tomorrow too.
I forget sometimes how much value you can get out of buying a larger joint of meat - it seems to bring the cost per portion down quite a bit.0 -
Had thought of carrot souffle plus bacon chunks but have been invited out for lunch so will cook souffle later and portion for freezer and some for tomorrow, also make carrot + ginger soup while I am at it. The piri piri chicken I cooked yesterday for myself and friend was very good so will buy a spice jar of piri piri mix now I know I like it.0
