    Followed a BBC recipe for sticky lemon chicken (replaced with Quorn chicken). Served with lemongrass, coconut and chili rice (on offer) and broccoli, OH also had YS mushrooms. Another yummy dinner from trying some new recipes!

  • Had a Nando Piri Piri chicken mix (with turkey steak) the other day and really really liked it so instead of meeting friend for lunch today, I have invited him here and am using a packet of Asda Piri Piri chicken from freezer. Am putting red onion, potatoes, some little tomatoes and couple of corn cobs in oven with the chicken slices on top. Will serve with some chopped leeks and sprouts. He is not very adventurous so have not told him what we are having and hope he likes it. He has never been married and eats tinned meat and frozen ready meals when he does not do lunch with me so am making him try different things, took him years to try pasta. Hot cross bun to follow.

    Random curry last night was lush. Also made nigella seed flatbreads. DH was in heaven.

    Tonight is veggie sausages, mash, green beans, broccoli and gravy.

    I am definitely lacking enthusiasm for cooking this week, ended up having a £1 crustless broccoli and cheese quiche from asda last night as was late home, not something I would normally purchase!
    Must cook tonight – even if it is the mac cheese, I do make a good mac cheese

    Am making sweet chilli chicken thighs a la JackieO with boiled potatoes, green beans & peas. I'm even going to attempt to make my own sweet chilli sauce as DH isn't too keen on the bottle I bought! Certainly can't be any worse!

    Caesar style burgers: Quorn chicken burgers in cheese topped rolls with caesar dressing, vegetarian hard cheese and lettuce with a side of fries :)

    Was late with dinner this evening due to my own errors earlier in the day. Fish fingers, beans and (instant) mash....actually the sainsbobs instant mash is pretty good for spuds in a hurry.

    OH had Mexican rice and 'stuff'
