    Leftover chicken from Sunday's roast will magically be transformed into a chicken, leek and sweetcorn puff pastry pie which will feed us tonight and probably tomorrow as well.

    Steamed beef suet pudding - have left over beef stew with mushrooms and am going to try steaming in the SC. Will make mash with leeks which can become the topping for Anglesey eggs later in the week

    I was going to have pea and spinach soup that was defrosted yesterday with a slice of buttered tiger loaf...but on second thoughts, I'm coming to yours thriftmonster - sounds delicious :D

  • I was craving peach crumble and custard but, as usual, I couldnt be bothered to make it.
    So....i opened a value tin of peaches. And a value tin of custard. And a packet of crumble mix.
    Peaches and custard went in the microwave. Crumble mix got sprinkled in a non stick frying pan till it got toasted.

    Oh I haven’t had peach crumble in ages, that’s now on my to do list! Dinner last night was a healthy stroganoff yellow stickered from marks – was quite nice. Lunch involves eggs and ham and looking forward to the roast at the parents tonight :money:

    DD and her BF over for dinner tonight, Roast Pork, spring greens, carrots, roasties and Yorkies

    HM Chocolate fondants for pud.

    Pork is the second half of a joint bought YS at Christmas so costs mostly time as the rest was in fridge/cupboards
    Note to self - STOP SPENDING MONEY !!

    Hi thriftmonster, what are Anglesey Eggs ?
  • Cooked a very large beef and charitzo casserole with loads of different veg added plus a tin of borlottie beans and a couple of handfuls of dried pulses,lots of seasonings.Had a relax in the chair for two and a half hours while it slowly cooked then made dumplings to go on top.
    A large plateful each for me and OH with half left to serve with a garlic loaf tomorrow.
