We have done well out of this lamb leg (£8 in Aldi). I’ve still got enough meat left over to mince up and turn into spiced lamb and potato croquettes to have with salad tomorrow.0 -

Easy meal tonight, Spinach and ricotta tortellini with LO sauce from the fridge with caramelised onion, Wensleydale and squash topped ciabatta. All lovingly prepped and packed by Aldi for me to cook in a matter of minutes. I did use up some grated cheese though so it wasn't entirely un-:money:Feb 2015 NSD Challenge 8/12JAN NSD 11/16

Lasagne for the second night as there wasn't room in any of the three freezers to store the extra portions. Must start eating out of the freezer.Spend less now, work less later.0

Bought ys stir fry veg last night so am having Kung Po shrimps with half stir fry tonight. Other half tomorrow but as I will be out for lunch will not add anything to it or maybe an egg. Have made meal plan for next few days, make soup, salmon parcel amd shrimp with mushroom linguine, thats takes me to Monday when it will be some kind of pasta, Tuesday chick breast, Wednesday the salmon parcel again as a light meal because I will have guests and we would have been out all day at funeral. Back to normal after that.0

I.'m making a vegetarian cottage pie with a new to me recipe. It features walnuts, mushrooms and black beans wizzed in the food processor and cooked with finely chopped carrot and onion. Hope it turns out ok lol"It's hard to be a diamond in a rhinestone world"0

IM I read that initially as chicken casserole and thought 'that's a bit odd with pasta' :rotfl: should've known your menu would be more exotic.
OH is picking at bits tonight, I've just had some pulled chicken in a brioche bun with some sliced cucumber and the obligatory pickles. No 'slaw in so had to make do with salad cream.
