    Using the infamous left over froze prawn ring to make Spicy prawn laksa tonight.

    DH has bought man flu home, needs some chilli heat to unblock his nose ;)

    Roasted a chicken I bought at the weekend - did it upside down to see if it makes it any juicier....it was so tender the bleeding thing fell apart when I tried to lift it, juices everywhere, roasting bag split and me with a faceful of chuck :eek:

    Used up some cauliflower and was bemoaning the fact I didn't have time to peel spuds (busy working) when I remembered a tin of new pots in the cupboard, so boiled a few of those.

  • Old favourite fall back quickie supper....

    Linguini with melted Gorgonzola DOP stirred through and roasted tomatoes with some quality balsamic vinegar to cut through the richness. Some wilted spinach for some greenery.

    Although tomatoes aren’t at there best this time of year really enjoy this meal!

    Proper butchers pork and herb bangers with mashed swede, peas and onion gravy, proper winter warming food ;)

  • Easy meal tonight, yellow sticker smoked salmon, which has been in the freezer since Christmas, took it out early this morning to defrost,with scrambled eggs. Went to Lidl’s for a pack of soft brown cobs and some rocket salad to go with it. Not thought of a pudding yet but have got some ice cream if we want anything.

    Im roasting a chicken tonight, serving with baked potatoes, peas, yorkies, peas and carrots
    Any leftover chicken will be used for tomorrow nights meal – unsure what this is yet!

    We had slow cooked leg of lamb on Sunday, and I’m using up the leftovers tonight in a spicy lamb pilaf, with all sorts of random bits in it as well as the rice which also needed using up - a handful of spinach leaves, some diced red pepper and tomato, sliced spring onions, flaked almonds, chopped apricots and pomegranate seeds. Lots of spices, and it smells lovely.
