Roast potatoes with oven baked basa (wrapped it in a foil pouch with a little milk, knob of butter, some lemon and parsley...hope it turns out ok) and green beans for me...OH is currently on a restricted diet so no beans for him.
Am thinking of batch cooking some kind of lasagne tomorrow, I have some sweet potatoes, going to use some of those cubed. Do you think I need to cook them a bit before assembly? I'm going to do what I did before and layer the pasta uncooked, then freeze, it worked well before as steam from the hot sauce softened it enough to then be ready to finish when I reheated it. I had some spinach and mushrooms in the fridge that were starting to look a bit sorry for themselves, so I made them into a creamy sauce with some garlic, quark, onion powder and tamari and then had it with spaghetti.0

Chilli with rice and salad for our main meal this evening, and in a minute I'm going to have a fried courgette possibly with egg added as a big breakfast.
I've slowed down on the courgette/squash eating and have a freezer and fridge full of them plus still a couple to pick most days :eek:0 -
Lunch out somewhere today and supper will be chicken sausages in onion gravy with steamed veg all served in a giant Yorkshire pud and fruit salad with Greek yoghurt for pud. Coffee to finish.0

Small portion fish and chips at lunchtime. Tonight we'll have jackets with chilli.Spend less now, work less later.0

Roast leg of pork for us tonight, with roasties, yorkshires, carrots, broccoli, green beans from the garden, stuffing and gravy.0

Took MIL out for lunch, we had Slow roasted Lamb Shank with veg, she had Lasagne, we went for a lovely drive, popped into Fort Victoria for an Icecream (not for me) and took the long way back along the Military Road from Freshwater to Chale before heading home - gorgeous weather - a good day in all xNote to self - STOP SPENDING MONEY !!

Did a load of batch cooking as planned:
Sausage casserole with mash (Sausages, lentils, carrots, mushrooms with mashed potatoes with leek and cabbage added)
Special fried rice (Eggs, ham, bacon, chicken, peas, corn, carrots, mushrooms, spring onions, rice)
Veggie enchiladas (Rice, mushrooms, lentils in cajun seasoning, wrapped in wholewheat wraps, covered in sauce and topped with cheese)
Chicken curry and rice (chicken, sweet potato, courgette, mushrooms, jar of sauce)
Beef and bean casserole (beef, carrots, mushrooms, courgette, butter beans, gravy)
Pork and veg stir fry (pork steaks, bamboo shoots, oyster mushrooms, carrots, spring onions, sugar snap peas, sweet and sour sauce)
Tomato pasta bake (pasta, pasata, mushrooms, courgettes, seasoning, topped with cheese)
The next few days' worth in the fridge, the rest are portioned up in the freezer. Enough for 19 meals, and there's still the gammon shank in the slow cooker with veg to make a soup, plus the rest of the gammon to use in risotto / pasta.
Today I've had a late lunch of pork and veg stir fry, I'm going out this evening so there's a small portion of beef casserole if I'm hungry when I get in later.0
