    Today will probably be a chicken kiev from the freezer... I'd meant to pick up a frozen pizza from the SM earlier, and totally forgot! Don't want to go out again today, so a freezer meal it is!

    Last night OH had some mish mash with roasted veg. I had a quorn lasagne.

    Not sure about tonight, have lost my inspiration mojo somewhat

    A very simple but tasty red lentil and carrot soup. I'm on my own today, so I didn't have to have the regular fight with the offspring about whether lentils are in fact a cheap and tasty protein source or if they are actually the devil's own bogeys and liable to kill you if one passes your lips.

    Some WW prawn tagliatelle thing that was reduced from Iceland, actually quite nice and a good amount of prawns. Followed by a bowl of lidl cookie dough ice cream (I also have a tub of B&J in the freezer that I got from our local coop for £1.75...will see how that measures up)

    Griddled herbed pork steak, flat mushroom, large tomato, broccoli & jersey royals. Simple but tasty!

    I love the Harvester beer battered halloumi too, it makes for a very rich meal but lovely.

    I normally either dry fry halloumi or fry with a tiny bit of fat, and I find it always goes down a storm. I normally do that if we're having a bbq or buffet-style meal, but love the sound of it with mash and spring onions!

    That should have read lightly dusted cod. My phone spell check!!
    But it would be great with champ.


    Tonight we had egg fried rice and Thai green curry with prawns, mushrooms and mange tout. It was made from an Aldi spice mix in a bag, containing the paste, herbs and coconut milk and it turned out really nice.

    I'm not a halloumi fan - far too salty for me.

    How are you seasoning and cooking your duck? I have a raw duck leg in the freezer that I’d like to cook next week. I don’t feel like confiting it and I don’t like it sweet with orange or cranberries, etc.

    How are you seasoning and cooking your duck? I have a raw duck leg in the freezer that I’d like to cook next week. I don’t feel like confiting it and I don’t like it sweet with orange or cranberries, etc.


    I kept it really simple by just frying in a little sesame oil to give it a bit of flavour and added black pepper. The duck was sliced really thinly.
    The salad was spinach, carrot, cucumber and spring onion, again chopped/sliced thinly, and I added this to the pan to wilt a little while the pittas were warming under the grill. We served it with a handful of chips and a mayonnaise dip, and it was delicious.


    Tonight we're having scallop and chorizo linguine.
    Spend less now, work less later.
