I took an online course with the Food Standards Agency and I wouldn't eat anything that far over date. My mother has eaten ten year old strawberries from her freezer and her mother would buy unrefrigerated past the date double cream for her scones and wonder why she got diarrhoea. Breaking the unsafe food thing in this house.

We discovered two cans of in date ratatouille in the pantry cupboard, so Husband will pick up some organic chicken portions and bung ratatouille over them and cook slowly in the oven, for supper.

I'm absolutely fine, I have actually done a number of food safety courses. I'm very careful with fresh stuff and I'm also aware that it was Mark's and Spencer  product, who actually put more frugal dates on their food. If it really was such a concern then approved foods would be out of business?

Anyway today is pasta, Mediterranean veg, chicken and chorizo for daughter.

I'm having prawns, avocado and jacket potato with salad.

Husband is having, jacket potato, gammon with salad. I bought the gammon today with 75% off.

Supper tonight will be Fish Provençal, which is basically as many bits and pieces of unbreaded fish fillets as we can find in the freezer, plus onions, garlic, whatever white beans we can find, at least a couple of cans of chopped tomatoes, glug of olive oil and Herbes de Provence. Leaves from the growing basil, to decorate. That should deplete the fish drawer in the freezer.

Tuesdays are super busy days-in-the-office for me. I usually plan accordingly, and make something the day before which can be reheated easily but I have failed miserably in my planning this week!  However I have eggs, shallots, mushrooms and grated cheddar so I think we will just be having a nice simple omelette tonight.

I made a simple salad of chopped avocado, chopped tomatoes, cucumber and red onion. With omelette and home made actifry chips. It was delicious.
  • Yesterday was a full roast: stuffed pork loin, roast potatoes, cauliflower, broccoli, carrots, Yorkshire puds, gravy.
today we went a bit lighter with chicken and sweetcorn soup. DH had B&B with his and a cheese twist plus an iced ring donut for pud. I just had the soup.
Tomorrow will be some sort of cooked chicken, may do with a cheese crust - maybe like a chicken Parmesan.

I picked up a couple of packs of these Bosh! red pepper and spelt burger mixes free from the Community Fridge the other day, so we'll be having one of those.
Bosh Red Pepper Spelt Burger Mix 120g

I've had these before and they are quite good. This time I will be adding some coarsely grated carrot and courgette to the mix, then making them into falafel sized balls instead of burgers. I'll air fry them and serve them in pitta bread pockets stuffed with salad.  Absolutely all the ingredients were from the Fridge, so a free supper for us :)
