We're finishing up the Thai chicken larb I made yesterday, it was bloomin' tasty!
Note to self : I must remember to take some minced beef out of the freezer to defrost overnight, as the menu plan says it's stuffed peppers tomorrow.1 -
I made quorn spaghetti bolognese. I made a concentrated effort to make it better than the last one I made which was very bland.
It worked and we had it with garlic bread.1 -
@JIL you may already use this, but when I cook for my vegan son, I use nutritional yeast flakes to enhance the Umami flavours, works especially well in a bolognaise type sauce x
some form of stir fry tonight, might go for chicken and black bean over noodles for him, bean sprouts for me.Note to self - STOP SPENDING MONEY !!

Change of plan for tonight, turns out there is enough meat left on Sunday's roast chicken to make a decent sized chicken and mushroom pie using a pack of puff pastry which has been waiting patiently in the freezer since Christmas. This will make pie for two nights, and I will keep back enough puff pastry to make a roasted tomato tart for Friday. The pie will be served with carrots and courgettes, and the tart will be served with a big salad. It's been a pleasingly economical week, with most ingredients coming from the community fridge again. They save such an amazing amount from going into landfill just because it is nearing its sell by date - it's shocking how much the supermarkets (and HF) chuck out.2

got a pack of small meatballs from Lild which we'll be having with pasta and tomato sauce. It's the same weight as a pack of the larger meatballs but just more meatballs being smaller (if you see what I mean). I always run out of energy for cooking my this time of the week, so an easy beef burger is on the plan. Uses up loads of bits too, lettuce, onion, tomato etc
I've ordered a grocery delivery for tomorrow, I’m not in a routine yet with new job, so it was easier, I have spent more though as I rarely shop at Sainsbury’s and grabbed some things I don’t usually see at Aldi 🤫My meat order from local farm will be ready to collect tomorrow too - mainly lamb this month, so that’s Sunday sorted 🙌Note to self - STOP SPENDING MONEY !!

Supper tonight was organic sweet potatoes stuffed with Mexicana and Mozzarella and courgettes stuffed with prosciutto.
Total fail on the recipe with courgettes. My cousin had sent her recipe with Mozzarella and Ritz crackers for the courgettes and we had agreed to sub crushed walnuts. I don't know what happened but husband removed the courgette flesh, boiled the courgette shells, chucked in some rolled up prosciutto and sloshed olive oil over it. Yuck.
Sweet potatoes were fantastic though. Husband grated Mozzarella and Mexicana and topped them with that. Hot, sweet, yummy.1
