@JIL you may already use this, but when I cook for my vegan son, I use nutritional yeast flakes to enhance the Umami flavours, works especially well in a bolognaise type sauce x

some form of stir fry tonight, might go for chicken and black bean over noodles for him, bean sprouts for me.
Thankyou, I actually have the yeast flakes in the cupboard and never would have thought about putting them in a bolognese sauce.

Tonight we will be having a chip shop dinner.

Salmon wellington courtesy of Lidl.  Stopped and bought a bag of baby spinach which should be all that's needed to go with it.

I called into Tesco yesterday, and lucked-out with a whole load of really good YS reductions including two of their Finest cod and parsley melt in the middle fishcakes for £1. We’ll be having those with a few cheeky chips and a side salad tonight.

The rest of the YS bargains are stowed away in the freezer, which has filled it up again at a time when I was valiantly trying to empty and defrost it. So yay for the money saving bargains, but also **sigh** 🤣

@C_J be mad to say no to freezer bargains 🙌

Will roast a half leg of lamb with rosemary and garlic, served with celeriac dauphinois and steamed broccoli.

LO lamb will make a scotch broth type thing this week.

Always tuna bake - layers of tinned tuna (in sunflower oil), parmesan, sliced potato, little bit of salt - pop in the oven for 75 mins - perfection for about £2.50 per person!

Sending OH out later to exchange the fitted sheet bought that is too deep.  Suggested stopping at Lidl to get some ham or similar to have in rolls but he's counter suggested us having the schnitzel that's in the freezer.  That with some potatoes would do nicely.  And maybe the rest of the coleslaw.

Last night's dinner was a bit meh.  He did chicken breasts sliced and cooked in a mediterranean sauce with added chick peas served with couscous.  The sauce was a bit spicy in an odd way - I was still tasting it 3 hours later when I went to bed.  Not that it was bad just not great.  Shame as we have some left - I suggested adding some of the pork that's in the freezer to eek it out a bit but he wasn't wild about that idea and said I could have it for lunch - not sure I will.  Might see if I can convert it to soup somehow.

    Sausage casserole for me.
So 1 pkt of 6 sausies with mushrooms, peppers, onions, roasted sweet potatoes and courgettes, tomatoes, seasoning, tin of lentils for added bulk and a pkt of mange tout and baby corn I forgot from my stir fry the other day.
Made 7 portions so no cooking for me for the week! :D

I cooked a pork loin joint with stuffing and cocktail sausages and put a small gammon in the slow cooker.
Made some mash and steamed a load of veg on top of the potatoes.
Plated up 4 plates of meat, mash and veg for the inlaws (2 days) and husband had todays dinner, made up also from the above.
Daughter and I had a mushroom pasta with salmon and tenderstem broccoli.

I also chopped up a load of fruit for the next couple of days with yogurt.
