    This is a long shot, but did anyone on here buy the Home and Freezer Digest in the 70s / 80s ?
    I used to make a delicious sausage and apple casserole from a recipe in the magazine and have since lost it.
    It was very cheap to make and filling so great on the purse.
    I have a hankering to make it again but can't remember the ingredients and method.
    I remember it uses sausage meat, potatoes, apple, onions, tomatoes and optional cheese.
    Fingers crossed someone on these boards will know what I'm on about and have kept the recipe and be willing to share. Please.
    How about the James Martin variety? I have had this and its lush.

    • 1 medium pepper, any colour
    • 250 g cooking apples
    • 1-2 cloves garlic or 2 teaspoon garlic puree
    • 100 g streaky bacon
    • 2 teaspoons oil for cooking (10ml)
    • 8 large sausages
    • 1 tablespoon plain flour (15 ml)
    • 120 ml stock
    • 400 g canned chopped tomatoes, 1 can
    • 1 tablespoon tomato puree heaped tablespoon (30ml)
    • 1 tablespoon Worcester sauce (15 ml)
    • ½ teaspoon salt Pepper

     How To Make James Martin Sausage And Apple Casserole

    1. In a big pan, heat the oil over medium-high heat. When the pan is hot, stir the sausages, bacon, and onion for 2 to 3 minutes.
    2. Cook for another 3–4 minutes after you add the pepper and garlic. Cook for another minute after adding the apple.
    3. The sausages should start to turn golden.
    4. Take the meat and veggies out of the pan.
    5. Bring down the heat to medium. Add the flour and, if you need to, a teaspoon (5 ml) more oil. Mix well. Add the water, tomatoes, tomato puree, Worcestershire sauce, and salt. Stir well to mix.
    6. Bring to a boil the meat and veggies that you just put back in the pan. Cover the pan, turn the heat down to low, and let it boil for 15 minutes.
    7. Stir again, then add ground pepper and more salt to taste. Continue cooking for another 5 minutes.

    Last night was lasagna and garlic bread.  OH wants to eat early and is going to bed early so I'm having to readjust.  I don't mind it's just different.  I'm sure it's better for us.

    Burgers, from Lidl.  OH asked to have ordinary cheese on his, meaning american plastic slices.  I refuse to buy those (yes, I'm mean) so he has the choice of emmental or monteray jack.  I did decide to buy the proper heinz ketchup as he's been complaining about the tesco stuff which he says is not as nice.  I got some coleslaw as well as I like it.

    I went out. I had spinach and baked mushrooms, followed by salmon in a chive and butter sauce, smashed potatoes and veg. No dessert.

    LO beef stew from Monday (beef chunks, onion, butternut squash and prunes).

    Then made a butternut squash pie (like pumpkin pie) as I had half a butternut squash left. 

    Squash were massively reduced in Tesco a few weeks ago so we bought several and they just keep going!

    Mister CJ has a craving for pizza tonight, so that's what we're having. I have a basic cheese and tomato pizza in the freezer which I will zhuzh up with some fridge oddments - ham, pepperoni slices, garlicky sliced mushrooms, blobs of mozzarella, chopped fresh tomato, onion and red pepper plus more grated strong cheddar. I've just about got enough lettuce, cucumber, tomato, radish and avocado to rustle up a small side salad to go with it, after which I really must do a food shop.
