Knew it was going to be busy today, so plated up 2 extra plates of roast yesterday - easy dinner tonight 🙌 the chicken bones are in the freezer ready for stock.Note to self - STOP SPENDING MONEY !!

Pork with stir fry veg. I have 2 pouches of that quick mixed rice - one basmati and the other with quinoa and stuff. And I've discovered that they work very nicely by emptying into a pot, add a very small amount of water and heat on the stove top instead of nuking. Which can't be done as the microwave has not (yet, if ever) returned to the kitchen. changed last night's menu slightly. I was going to do some rice but then realised I had such a lovely big bag of really fresh bean sprouts so just loaded lots of those in so there was a pile of veg stir fried. very nice.
tonight I'm having lamb rump and a couple of potatoes - not sure if I'll be lazy and bake or lob them in water to boil. There's some rocket and tomatoes which might be added for pretty. I left out some smoked skinless and boneless haddock to defrost. I put this in the bottom of a greased oven proof dish, topped with leftover cauliflower cheese, then topped with spinach and grated cheese. Baked for a half hour and it was delicious. Served with green beans. Carb lite.2

We had pan-fried wild caught Alaskan keta salmon fillets (Waitrose offer), with steamed organic asparagus, pan-fried organic mushrooms and leeks and organic mayo on the side.

Worked from home today as I wasnt feeling great. I finished early, threw some lamb steaks, black pudding, onion, baby carrots, potatoes and stock into a casserole dish. Put in a low oven alongside a couple of big potatoes, asked Alexa to shout me in 2 hours and went for a sleep with my hot water bottle. Although the dog had other ideas.
So husband had the casserole, I had a jacket potato with cheese. I did some steamed broccoli for both of us and tomorrow's lunch is sorted with the leftovers3 -
Have mushrooms to use up, so a Tuscan style chicken and mushroom creamy bake with parmentier potatoes and broccoli tonightNote to self - STOP SPENDING MONEY !!
