Tonight I am making a tray bake of salmon fillets on top of a mix of tenderstem broccoli, courgette, sliced green beans, pak choi, mushrooms and sliced red chilli with half a tin of coconut milk poured over. All the veg and the coconut milk were free from the Community Fridge.2

I put the gammon in the slow cooker yesterday, with cider as I always do. Unfortunately its tropical cider and husband says theres a weird taste going on as he did his taste test when carving it this morning.
It will still be used, alongside roast pots and veg. Not sure what I will have, I never really enjoy a sunday dinner, perhaps because of all the cooking I've just done. 🙂.
I might make myself a quorn cottage pie, thank you for the idea @Islandmaid1 -
We had a sort of mixed grill using up some bits from the freezer: half a sirloin steak each, a little pork loin chop each and a couple of sausages. Served with hm chunky air fryer chips, onion rings, garlic mushrooms, peas, roasted tomatoes and peppercorn sauce. I've made a berry cheesecake for pud.1

possibly the cider had sweetener in it ?? It cooks up weird!!!
We had the second half of the coq au vin which actually had very little vin in it (confession - someone un-named drank it.....) but it was very tomato-ey and I put the rest of the mushrooms in. Had it with some boiled potatoes and OH was pleased. Then again he'd made himself a couple of bloody marys before dinner so he might have been please with dry crackers...

@Brie no sweetener but not usual cider, I bought 12 bottles for £5, (BBE Jan 24)as I always cook gammon, pulled pork etc in apple cider. I didnt notice the tropical in this with mango, pineapple and I think guava 😅.
Apparently it was ok eaten with other things.
Tonight it's our usual salad. I have egg and Tuna, husband has some breaded chicken.
I did make a vege cottage pie yesterday so made extra mash and made poundies (spring onions, butter and mash) to go with the salad.

This is a long shot, but did anyone on here buy the Home and Freezer Digest in the 70s / 80s ?I used to make a delicious sausage and apple casserole from a recipe in the magazine and have since lost it.It was very cheap to make and filling so great on the purse.I have a hankering to make it again but can't remember the ingredients and method.I remember it uses sausage meat, potatoes, apple, onions, tomatoes and optional cheese.Fingers crossed someone on these boards will know what I'm on about and have kept the recipe and be willing to share. Please.2

Tonight husband is having liver and bacon casserole, I'm having the other half of the cottage pie I made on Sunday. Not really looking forward to it as it was a bit bland.
Will get out the brown sauce!!
