I made coq au vin with fried garlicky courgette slices and cauliflower cheese last night, and we’ll be finishing that up tonight.
Today will be a cooking day to ensure I have a week’s worth of meals ready in the fridge and freezer for the two of us, as I’m having my second cataract surgery tomorrow morning (gulp!) and will need to take it a bit easier for a few days.5 -

Ended up with a really lovely Chicken Caesar salad last night, green beans boiled eggs, grilled Tuscan chicken, crispy smoked bacon, over leaves made a quick caesar dressing and YUM….
We’re away for the weekend so having a fridge clearing menu this week. Tonight is even simpler, chicken wings that were part of the M&S meal deal, with salad and some of the dressing as a dip.Note to self - STOP SPENDING MONEY !!
