Got an art class today and had intended to go to the shops before but I think I've left it too late so will go after. Intending to pick up some cauliflower or some premade cauli cheese to have with gammon steaks. We would normally have them with eggs and chips but OH has said no carbs with dinner so this would be a good alternative I think.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. We had a very rare takeaway yesterday, so I'm finishing off my veggie curry. The others are having a slow cooked sausage casserole, with mash (the sausages were YS)2

Soup for dinner tonight with some leftover focaccia I made at the weekend for dipping!Aim:12mth Emergency Fund -> £14264/£17076 (83%) Aim 2: Mortgage Overpayment -> Paused until other aim fulfilled.2 -
Change of plan for tonight, I'll be turning some of the leftover roast beef into beef chow mein.
I collected apples and bananas from the community fridge the other day, and made them into an old fashioned apple and banana Betty - chunks of fruit mixed with a little brown sugar, nutmeg and cinnamon, and layered with wholemeal bread crumbs which had been fried in butter. Bake for 30 mins until the fruit is soft and the top is crispy .... it was really nice3 -
Use up day - amazingly we still have some LO lamb from the monster leg of lamb the other weekend, so that, some BNS and a frozen bag of med veg will go into a pot with harissa, olives, pickled lemons, tomatoes etc = Tagine, will do some cous cous for them tooNote to self - STOP SPENDING MONEY !!

Considering going into the kitchen to start prepping the cauli cheese for tonight to have with gammon steaks.
OH and if anyone wants to go on a diet do NOT read Stanley Tucci's books. OH bought me Taste for Christmas and I'm drooling over most of the pages.I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards. Snap @Brie - I am also readying myself to make cauliflower cheese! The troops are having stewing steak chilli from the freezer with jacket potatoes, I’ll have mine with the cauli cheese 😋

Blinking heck - just checked BBC Food for a cauli cheese recipe and am amazed at one of their substitutions. They seem to think that 50 g of butter is equivalent to 1 cup of magarine!
Anyhoo - it's made and is sitting in the oven for heating up at dinner time. The cheese sauce is a bit on the runny side and not quite cheesy enough and there's too much (is that possible???....) so I'm hoping that after baking it for a bit it will get thicker and there will be enough room to add a bit more cheddar on top. And maybe breadcrumbs (might substitute croutons....).I’m a Forum Ambassador and I support the Forum Team on Debt Free Wannabe, Old Style Money Saving and Pensions boards.
