On the use up note, I have some rice LO still so may have that, egg fried with some spring onion and broccoli tomorrow with the last piece of salmon from the freezer.I also have some raw mince in the freezer that i may turn into something for future.Feb 2015 NSD Challenge 8/12JAN NSD 11/16

Off to get the pork chops out of the freezer. OH has declared they will be had with vegetables but no potatoes/rice/starchy anything. Today is my daughters birthday so I’m doing sausages, sweet potatoes (orange potatoes as she says) then carrots, cauliflower left over and peas. Covered in gravy. She loves sausages, sweet potato and peas plus she loves gravy so a winner. Then we have chocolate birthday cake after:money::rotfl::T4 -

we're having a Korean feast--grilled chicken, braised oxtail, 3-4 kinds of tapas-style veg to go with, and a light starfruit salad. We'll have tons of leftovers so I won't have to cook for a few days. I'll probably make dh throw some sausages on the grill with the chicken. I LOVE a grilled sausage.5 -
Yet another quick meal tonight. I grilled some frozen breadcrumbed soya nuggets and we had them with a veg curry (used a jar of Tesco's Plant Revolution korma sauce) and brown basmati rice. Veggies were celery, sweet pepper, courgette, carrot, kidney beans and sweet potato. Home-made sultana cake and a coffee later.2

I found some YS pork loin steaks in the freezer, so had them with air fryer roasties and spinach. We've run out of gravy so I made a mushroom sauce using a tin of mushrooms that had been lurking in the cupboard for ages. I don't usually like tinned mushrooms (so not quite sure why I even had them) but they were fabulous in the sauce so that was a nice surprise.2

We had a really delicious roast beef dinner tonight, with the beef joint which was part of the ‘meal deal’ from the local butcher. There’s enough left over to make two more meals I think, so tomorrow we’ll be having some kind of spicy beef and red pepper tortilla thing, and then I’ll mince up the remaining beef to add to a mac’n'cheese. Or something.2
