    campaigning to clear out the freezer so I'll be voting for fish and chips tonight.  We have 2 odd pieces of breaded haddock and a pack with 2 piece of crumbed fish which I'll be happy to have.  Likely have 1 piece for dinner and the other for lunch tomorrow.  Alternative meals would be to have salmon and peas (all in the freezer as well) or soup and prawn sandwiches (OH normally goes for egg and prawn while I prefer avocado with mine.)

  • i have peppers that need using so we're going to do lasagna stuffed peppers tonight.  I'm pretty tired of Korean food now.  Lol.    

    and after that--I'll need to buy some peppers to make shrimp ceviche.  Ha ha ha ha ha!

    Been grocery shopping so have choices, either burgers and fries, lettuce wrapped burgers for me, or BNS soup and HM bread for them, can’t decide 🧐

    There was a chunk of Sunday's roast beef left to use up, so I have minced that and added it to diced onions, peppers, chillies, garlic, tomatoes, leftover cold cooked rice and some grated cheese. There is so much there! It will fill at least six wraps, so we will have a baked chimichanga each tonight, and again tomorrow, plus another two for the freezer. The freezer which I can never seem to empty :)

    No cooking for me today - ate at SA - fish pie & broccoli  + cheese cake with raspberry coulis.

    Defrosted some lamb mince I got reduced in Lidl. I find lamb so incredibly expensive so we don’t buy it often unless it’s reduced or on offer. 

    So I’ve essentially made a shepherds pie. I added in onions, carrots, lentils and peas to the mince as well as the usual seasonings, gravy etc. This bulked it out and gave me 2 lots. I’ve frozen the mince for another meal, just need to add mash. The one we had tonight used normal and sweet potatoes as my daughter loves “orange potatoes”. Cheeky cheesecake for pudding courtesy of Ms Molly from Tesco, I love the lemon one

    @C_J i am on a constant freezer empty quest. As soon as i have space i get twitchy and find something to fill it up with. I wonder what will happen if i do ever empty it.

    More bolognaise type sauce tonight with some penne pasta for me. OH just had pasta and non meat sauce.
